Abstract

PURPOSE: To prepare fish boiled with soy of good quality, by boiling fish meat which is immersed in a seasoning, e.g. soy sauce, miso, or tomato sauce, in a closed container.
CONSTITUTION: Fish meat which is precooled or frozen in a closed container having freeze and heat resistance, in immersed in a precooled seasoning comprising soy sauce, broth, sugar, sodium glutamate, or a ginger, to extract proteins. The surfaces of the fish meat are thus coated with actomyosin films. The meat is then rapidly frozen to form colloidal glazes and stored for a long time.
