Abstract
PURPOSE: To provide a sodium-free salting agent having excellent taste, by adding glycyrrhizin or stevioside and a polybasic organic acid to potassium chloride.
CONSTITUTION: Potassium chloride is heated at 500°C. An aqueous solution of glycyrrhizin or stevioside is sprayed to the potassium chloride under stirring and cooling to cover the surface of the particle of potassium chloride with the solute. After cooling, the particles are added with an edible polybasic organic acid such as malic acid, citric acid, tartaric acid, etc. or slat of glutamic acid, inosic acid, guanic acid, etc., and stirred to obtain a homogeneous composition. The amount of glycyrrhizin is 0.04W0.25wt%, based on potassium chloride. The corresponding amount of licorice extract may be used in place of gycyrrhizin. The stevioside may be replaced by the corresponding amount of stevia extract. The salting agent is used in the preparation of miso, soy, GOMA-AHIO (parched sesame seeds mixed with salt), FURI-KAKE (seasoned fish flour for sprinkling on boiled rice), etc.
