Abstract

PURPOSE: To store a food with a taste and flavor unique thereto retained for a long term, by freezing a packed fish, vegetable, etc. at an ultrahigh speed, and storing the frozen fish, vegetable, etc. at a specific temperature for a long term.
CONSTITUTION: A perishable food, e.g. a fish or vegetable, is washed, packed and frozen with liquid nitrogen or dry ice to -78°C or below at an ultrahigh speed, to freeze the moisture in the food. The frozen food thus obtained is then stored at -20°C or below for a long term.
