Abstract
PURPOSE: To preserve a raw white meat fish which is liable to be deteriorated by freezing, without changing the taste, by freezing the meat in a vacuum package.
CONSTITUTION: A white meat fish 1 esp. eel, etc., is vacuum-packaged and frozen. The vacuum-packaging suppresses the migration of water in the meat tissue of eel, etc. to the surface of the meat by the dehydration effect caused by freezing. Since white meat fish contains a large amount of water in its meat tissue, and the water is supposed to cause the remarkable damage to the meat tissue by freezing, the suppression of water migration by the vacuum-packaging enables the long-term preservation of the meat without change in the taste.
