Abstract
PURPOSE: To obtain slices of raw fish having improved taste and appearance, by soaking deep-sea fish meat with its head and tail removed, separated from the backbone, in a solution obtained by dissolving a specific amount of chemical seasoning in a solution of salt with a specified Baume degree, followed by packing the meat with a sheet of cellophane paper and freezing.

A deep-sea fish with its head and tail removed is cut in such a way that the meat is separated from the backbone as a boundary line and the metal is soaked in the prepared seasoning solution for 5W30min. The meat is packed with a sheet of cellophane paper and frozen by a quick freezer, to give a product.
