Abstract

PURPOSE: Chilled propylene glycol aqueous solution is sprayed on fishes to make the frozen products.
CONSTITUTION: On fishes with cell tissues rejecting the penetration of propylene glycol is sprayed a propylene glycol aqueous solution that contains 38W45wt% of propylene glycol, being chilled to about -17W-25°C, preferably incorporated with a defoaming agent as a food additive to freeze the fishes. The sprayed propylene glycol solution is filtered and adjusted in the concentration and reused by circulation. The time required for freezing is largely reduced, thus preventing the weight reduction of fishes caused by dryness and the oxidation and keeping good shapes of the frozen products and the good taste, facilitating the separtion of the products frozen in blocks, and permitting the treatment in large amounts per unit time.
