Abstract

PURPOSE: To improve the quality stability, emulsifiability, dispersibility and suspensibility, by incorporating sclerogum as a binder in a frozen food, e.g. ice cream, uniformly.
CONSTITUTION: Sclerogum is uniformly incorporated in a frozen food, e.g. ice cream, sherbet or shaved ice. The sclerogum consists of glucose units linked in a straight line via β-1,3-bonds and attached glucose units linking to the main chain at various intervals via β-1,6-bonds, and is obtained by incubating a fungus belonging to the genus Sclerotium. The amount of the sclerogum is preferably 0.001W1wt% per the frozen food. For example, a mixture of 20pts. sugar, 5pts. powdered thick malt syrup, 0.2pt. citric acid, 10pts. orange juice, 0.1pt. sclerogum and 64.7pts. water is dissolved at 70°C for 30min, cooled to 10°C, frozen in a freezer with agitation, and frozen at -15°C or below to give a sherbet.
