Abstract

PURPOSE: To prepare a chocolate paste for a frozen food having the plasticity at the freezing temperature, by incorporating a chocolate having the fluidity at ordinary temperature with a liquid dairy product or an imitation thereof and a hydrophilic natural high polymer, and controlling the moisture content in the resultant mixture at a specific value.
CONSTITUTION: Chocolate having the fluidity at ordinary temperature is incorporated with a liquid dairy product, e.g. fresh cream, concentrated milk or skimmilk, an imitation thereof, e.g. filled cream or imitation cream, or a hydrophilic natural high polymer, e.g. locust bean gum, guar gum or tamarined gum, as principal components, and further sorbitol, etc. to give the aimed composition. The moisture content in the resultant composition is controlled at 20W 50% based on the total amount of the composition.
