Abstract

PURPOSE: To prepare a chocolate paste capable of retaining the moderate consistency even at a freezing temperature, by incorporating a chocolate having the fluidity at ordinary temperature and a liquid dairy product or an imitation thereof as essential components with a specific amount of water.
CONSTITUTION: A chocolate which is ordinarily known as an ice coating chocolate and has the fluidity at ordinary temperature and a liquid dairy product, e.g. fresh cream, cow's milk or concentrated milk or a dairy imitation product, e.g. filled cream or filled milk, as essential principal components are incorporated with 20W50%, based on the total composition, water and polyhydric alcohol, and the resultant composition is mixed or homogenized.
