Abstract

PURPOSE: To obtain a process cheese, which has excellent meltability, will not stick to the tooth even after cooling and is readily molten in the mouth, by adding sodium citrate and calcium lactate to a natural cheese.
CONSTITUTION: 1.0W4.0wt% sodium citrate and 0.1W1.0wt%, preferably 0.3W 0.6wt%, calculated as calcium, calcium lactate are added to a natural cheese, and the resultant mixture is emulsified under heating to give a readily meltable process cheese. The product thus obtained is molten well by heating at a relatively low temperature, e.g. about 70°C, in the same manner as the natural cheese, has a low viscosity and is readily molten in the mouth without sticking to the lip or tooth like the ordinary process cheese.
