Abstract

PURPOSE: To provide hard butter having excellent hardness and sharp melting point, containing high purity di-saturated mono-unsaturated fatty acid triglyceride.
CONSTITUTION: A solid fat containing ≥80wt% of di-saturated mono-unsaturated fatty acid triglyceride (GS2U) and having a solid fat index of ≥70 at 25°C, is prepared by (1) melting a natural vegetable fat having a solid fat index of ≥50 at 25°C and containing ≤3wt% of tri-saturated fatty acid triglyceride and 55W70wt% of GS2U, (2) cooling the above molten fat to a temperature at which the solid fat index becomes 30W60, while preventing the precipitation of crystals, (3) adding 0.1W10wt% of sufficiently aged and solidified powdery natural vegetable fat having the same triglyceride content and solid fat index as the natural vegetable fat used in the process (1), to the super-cooled liquid fat obtained by the process(2), (4) aging the mixture at a temperature at which the solid fat index of the vegetable fat becomes 45W60, and (5) filtering the aged product under high pressure.
