Abstract
PURPOSE: To prepare a colorless oil for a cooking hot plate, free from sputtering tendency, by heating an oil or fat containing specific amount of phospholipid in the presence of sodium acetate, and filtering and deodorizing the product.
CONSTITUTION: An oil or fat containing ≥0.5 wt% of a phospholipid is mixed with ≥1 wt%, pref. 3W50 wt%, based on the amount of the phospholipid, of sodium acetate, and heated at 60W180°C. The residual sodium acetate is removed by filtering, and the filtrate is deodorized to remove the odor originated from the sodium acetate, and, if necessary, added with a vegetable oil to adjust the content of the phsopholipid in the oil or fat to 0.5W5 wt%.
