Abstract
PURPOSE: Lecithin and a sorbitol fatty acid ester with a specific HLB are incorporated to prepare an oil for roasting on hot plate that shows reduced spattering.
CONSTITUTION: To a vegetable liquid oil are incorporated 1W5wt% of lecithin with high lipophilic property and 0.05W2wt% of a sorbitol fatty acid ester that has an extent of hydrophilic nature and further dissolves completely in the vegetable liquid oil. The sorbitol fatty acid ester is preferably 4W10 in HLB
