Abstract
PURPOSE: Vegetable fibers are roasted and made into fine particles, which are brought into contact with meat having intense odor, thus deodorizing the odor and providing meat with good taste.
CONSTITUTION: Substances mainly consisting of vegetable fibers as grain, bran, soybean, soybean curd cake, soysauce cake, used tea leaves, coffee grounds, are roasted on a pan with thick bottom so that the substances are colored brown not carbonized until a slight burning smell is generated. The roasted product is ground into fine powder. After the fine powder is combined with water, salt, raw wheat flour, salad oil, and boiled, then are emulsified with a homoblender and meat with intense odor as mutton or whale meat is brought into contact with the emulsion.
