Abstract

PURPOSE: To preserve raw laver without causing change in color, by soaking the raw laver in hot water for a short time, cooling it, sprinkling salt on it.
CONSTITUTION: Collected raw laver is put in a cloth bag, basket, etc., soaked in hot water at 70W100°C for 1W3min, washed with cooling water at ≤20°C, and cooled. It is dehydrated, and sprinkled with 20W25wt% salt, preferably granulated salt. Since water is liberated, the laver is centrifuged, and 10W15wt% salt is added to the laver. The laver is packed into a container and shipped. After removing salt, it is used with sauce of Sake, soy, and vinegar, or as ingredients.
