Abstract

PURPOSE: To prepare low-caloric "ume" syrup having fragrance of "ume" flower, by immersing flowers and fruits of "ume" in a mixture of water and a low-coloric sweetener.
CONSTITUTION: Flowers and buds of "ume" are immersed in a sweetened liquor prepared by boiling a low-coloric sweetener such as maltitol, xylitol, sorbitol, etc. in water, followed by cooling. On the other hand, ripe "ume" fruits are treated to remove their harshness, drained, slitted at the top of the fruit, and immersed in a separately prepared sweetened liquor. The liquor immersed with the flower, etc. is homogeneously mixed with the liquor immersed with the fruit.
