Abstract
PURPOSE: To prepare pickled "ume" (Japaness plum) free of salty taste and having excellent taste, flavor and preservability, by washing "ume" fruits with water, salting, and preserving in salt water containing vinegar or acetic acid.
CONSTITUTION: Washed "ume" fruits are smeared with 8W17wt% of salt, stored in a vessel for 7W15 days, and separated from the exuded "ume" syrup. The "ume" fruits are preserved in saline water containing 0.8W4%, pref. 1W3.5% of vinegar or acetic acid and 8W17% of table salt for ≥3 days.
