Abstract

PURPOSE: To prevent the rot of strawberry, and to impart excellent taste and flavor to strawberry, by treating the lower part of a strawberry with sugar and/or a water- soluble organic acid.
CONSTITUTION: The lower part of a strawberry, i.e. the calyx or the part from which the calyx is removed, is treated with sugar and/or a water-soluble organic acid, e.g. citric acid, tartaric acid, malic acid, etc. The treated strawberry is pref. cooled to a temperature below about 10°C, esp. about 5°C and above the freezing temperature of the strawberry, or packed in a vessel and stored at a low temperature.
