Abstract

PURPOSE: To massproduce popsicles which can be taken easily and have excellent unique taste, flavor, and feeling to the palate, economically and sanitarily, by covering a travelling popsicle core chilled to a low temperature and having a proper size with water, and freezing and solidifying the water layer.
CONSTITUTION: A solid core having a proper size as a popsicle and composed of, e.g. chocolate, cheese, fruit, etc., is chilled at about ≤10°C, pref. ≤5°C. The core has, e.g. a stick as a support. The chilled core is transferred with a conveyor, and during the transfer, covered with water by spraying, immersion, etc. Additives such as sugars, perfumery, seasonings, spices, acidulants, etc. are pref. added to the applied water as well as to the core. The core covered with water is transferred into a freezing chamber and rapidly frozen to obtain the objective popsicle.
