Abstract

PURPOSE:To obtain a jam having excellent flavor and taste from astringent persimmons without using an astringency removal treating agent, such as alcohol or tannin decomposing enzyme, by freezing and storing the astringent persimmons, removing astringency, freezing the frozen persimmons and crushing the flesh. CONSTITUTION:Astringent persimmons, such as species FUJI or ATAGO, are frozen and stored at preferably 0--80 deg.C for 10-90 days and astringency is removed. The resultant persimmons are then thawed and the flesh is subsequently crushed to afford the aimed jam.
