Abstract

PURPOSE:To prepare frozen MATSUTAKE (Armillaria matsutake, a kind of mushroom) preservable over a long period without losing the characteristic taste and flavor of MATSUTAKE, by partly removing the water from a MATSUTAKE and quickly freezing the MATSUTAKE. CONSTITUTION:A medium-sized MATSUTAKE preferably in growing stage, i.e. in unopened or half-opened state, especially unopened state and having a diameter of 10-30mm, especially about 15-20mm is treated as follows. The MATSUTAKE having a water-content of generally 85-88.3% is left standing in an atmosphere maintained e.g. at 1-5 deg.C and a low humidity, preferably at a relative humidity of 30-50% for a prescribed period, e.g. 3-12hr. The overall water-content of the MATSUTAKE is decreased to 10-25% by this treatment. The treated MATSUTAKE having partially removed water content is quickly frozen preferably by CPF process, etc., at a setting temperature of -70--90 deg.C for 10-15min. The lowering of quality caused by the degradation of tissue of MATSUTAKE can be prevented over a long period, e.g. 0-3 days after thawing and the taste and flavor of the obtained frozen MATSUTAKE are comparable to those of raw MATSUTAKE.
