Abstract
PURPOSE: To prepare UME-ZUKE (pickled ume) or UME-BOSHI (dried pickled ume) to be stored for a long time without using salt, by adding a solution obtained by treating leaves of a beefsteak plant with an alcohol and/or vinegar to ume soaked in vinegar.
CONSTITUTION: 1kg washed ume is soaked in 600W700cc vinegar for 20W30 days. An alcohol or vinegar is added to leaves of a beefsteak plant, which is rubbed, and harshness is removed from the leaves. Vinegar or the alcohol is added to the leaves of a beefsteak plant to give a mixed solution containing extracted dyestuff. This mixed solution is added to the above-mentioned ume, which is preserved in this state for 20W30 days to give UME-ZUKE. If necessary, UME- ZUKE is dried to give UME-BOSHI.
