Abstract

The soaked small UMEs are dipped in hot water at 70W80°C for 10W20 minutes so that they are sterilized under heating. These UMEs are put in a pickling tub, 700cc of 10W15wt% salt water is added to 1kg fresh small UMEs, and a weight is put on them to carry out pickling.
