Abstract

PURPOSE: To facilitate the peeling of the skin of an ox tongue, by keeping the tongue in an atmosphere of steam at temperatures above a specific temperature.
CONSTITUTION: Raw ox tongue is washed thoroughly with water, and slime is wiped off. After removing the bones, the pharynx, fats, etc., the tongue is placed in a proper vessel which may contain a proper amount of water, and maintained in an atmosphere of steam at about ≥105°C for a specific time interval (e.g. at 105°C for 4hr., or at 120°C for 2.5hr.).
