Abstract

PURPOSE: To prepare a processed fish material eatable bone and all without a fish or fishlike smell, by immersing a fish in a fish flesh-modifying solution, e.g., a saccharide and/or amino acid solution, and by heat-treating the fish.
CONSTITUTION: A red-flesh fish, e.g. a sardine, horse mackerel or mackerel, is directly, or after removing the head and entrails, washed with water, if necessary immersed in a fish flesh-modifying solution, e.g. (A) a saccharide and/or an amino acid solution or (B) a mixture of citric acid buffer solution with a common salt solution, or in (A) and then (B), drained and put into a retortable pouch, which is heated at 105W125°C for 20W80min in a retort.
