Abstract

PURPOSE: To make it possible to use scallops even as raw ones for food, by removing the half shell and bowel parts from fresh scallops, and by rapidly freeze-drying the sterilized bodies with liquid nitrogen.
CONSTITUTION: Highly fresh scallops having shells, preferably living ones, are washed to remove foreign matter on the shells and then the half shells. After removing the bowel parts, the fleshes are sterilized in water containing 100W200ppm of chlorine, and rinsed with water, drained, and then freeze-dried rapidly with liquid nitrogen.
