Abstract

PURPOSE: To obtain readily eatable flavoring pickles of scallops having improved chewiness, and color, and tastes, by removing shells an bowel parts from boiled fresh scallop fleshes, and by drying the fleshes immersed in a seasoning liquid.
CONSTITUTION: highly fresh scallops having shells, preferably living ones, are washed with flowing water to remove foreign matter on the shells, boiled in salt water, and cooled. After removing the shells and bowel parts, the fleshes are washed with clear water, and the adductor muscles with the bands are immersed in a seasoning liquid containing sugars, salt, alcohols, spices, honey, thick malt syrup, tartaric, citric, and sorbic acids for about 4hr. 10W40% of water is then removed by a cool air dryer to give the desired flavoring pickles of scallops.
