Abstract

PURPOSE: The water-soaking process in the production of reconstituted green peas is effected by the combination of standing water and flown water, whereby reconstituted green peas with low hardness, low degree of cracking and high clear color.
CONSTITUTION: After dried green peas are reconstituted with water and boiled, they are soaked in the combination of standing water and flowing water, e.g., in flowing water for 3 hr and in standing water for 10 hr, preferably dipped in hot water containing calcium for a short time. Then, they are charged in a vessel along with water and sterilized. Deionized water is used for the reconstitution and/or soaking.
