Abstract
PURPOSE: To prepare colored glutinous rice which can be stored for a long time without discoloration, by circulating boiled soup of cowpeas or adzuki beans while cooling spontaneously, keeping the colored soup at a specific temperature, and dyeing the glutinous rice with the colored soup.
CONSTITUTION: Soup of cowpeas or adzuki beans is charged in a coloring tank 1 furnished with a circulation pipe 2 having an intake 21 and an outlet 22 and a circulation pump 3 inserted between the intake and the outlet. The soup is circulated with the circulation pipe 2 and cooled spontaneously to obtain the colored soup. The spontaneous cooling is carried out in the presence of a slight amount of sodium bicarbonate. The colored soup is maintained at a definite temperature (the optimum value is 12°C and the range is about ±5°C) by the temperature controller 4 placed in the coloring tank 1. The glutinous rice is immersed in the circulating colored soup to the complete the coloring of the red rice.
