Abstract

PURPOSE:To facilitate quick thawing of a frozen food without causing degradation of the food nor using a large amount of water and expensive apparatus, by constantly controlling the temperature of thawing water at a definite level and immersing a suspension bag containing a frozen food into the thawing water in a state to allow the passage of the thawing water through the bag wall. CONSTITUTION:A frozen food 3 is put into a suspension bag 4 which can be poured with water. The frozen food in the bag is immersed into thawing water 9 in a thawing tank 1 cooled at 5 deg.C. The water temperature of the thawing water 9 in the bag 4 is lowered by the frozen food 3 of -20--40 deg.C. The thawing water 9 in the bag 4 is allowed to flow out by the convection generated by the agitation 2 of the thawing water 9 in the tank 1 to uniformize the temperature of water. When the temperature of the thawing water 9 is lowered to <=5 deg.C, the feeding water tank 13 is heated 12 according to the command transmitted from a control box 15 and hot water is transferred to the tank 1 to control the temperature of the thawing water 9. When the temperature of the thawing water 9 is increased to >=5 deg.C, a command is transmitted from the box 15 to the tank 13 to cool 11 the water and transfer the chilled water to the tank 1 to control the water temperature of the thawing water 9 at 5 deg.C.
