Abstract

PURPOSE: To prepare wakame seaweed boiled in soy having thoroughly permeated taste, processable into a viscous paste, by immersing raw wakame in an alkaline aqueous solution for a long time.
CONSTITUTION: Raw wakame seaweed is immersed in an alkaline aqueous solution, e.g. sodium hydrogencarbonate, of pH 7.5W11, preferably 8W9, at 4W15°C, and 1.5W55kg/cm2 for 10W120hr. The treated wakame is rinsed with water, crushed into small pieces, and stored in a refrigerator at 4W5°C for 24W48hr, and boiled with soy.
