Abstract
PURPOSE: To prepare a proteinous food raw material giving similar feeling to the plate to crab meat, by denaturing the paste of krill meat with an alcohol.
CONSTITUTION: Krill paste prepared by grinding krill meat is denatured with an alcohol by extruding the paste in the form of filaments or strips into an aqueous solution of alcohol having an ethanol concentration of ≤80% and containing an inorganic alkali metal salt or ammonium salt in an amount of ≥1/3 of saturation, or into an aqueous solution of alcohol added with an alkaline earth metal salt. Alcohol and salts are removed from the denatured product by washing with water to obtain the objective food raw material having similar texture to crab meat.
