Abstract
PURPOSE: Knojak (devil tongue) made from konjak paste, starch paste and protein solution is frozen and then thawed to produce said food having texture and appearance of whale meattal exposed to running water.
CONSTITUTION: A mixture consisting of knojak paste, starch paste containing the same amount of starch as the konjak powder, a protein aqueous solution containing 5W100 wt% of protein based on the konjak powder, when needed, further methylcellulose and acidic pyrophosphoric acid is mixed with an alkali as lime milk to form an alkaline paste. Then, the paste is extruded into an alkaline coagulation bath. The coagulated knojak is frozen to -10W-30°C and then thawed.
