Abstract

PURPOSE: To improve the freeze-denaturation suppressing effect remarkably, without increasing the sweetness of the fish paste, by adding a sugar or a sugar alcohol, a polyphosphoric acid salt, and hydrolyzed starch to the paste.
CONSTITUTION: 1,000pts. of raw fish meat is mixed and kneaded with (A) 20W 50pts. of a sugar or a sugar alcohol, preferably sorbitol, (B) 1W3pts. of a polyphosphoric acid salt such as sodium polyphosphate, sodium pyrophosphate, etc., (C) 20W50pts. of a hydrolyzed starch having a DE value of 23W35, and if necessary (D) 0.1W3pts. of sodium cellulose glycolate, and is frozen to obtain the frozen fish paste.
