Abstract
PURPOSE: To obtain a non-toxic, natural food dye, economically and stably, by extracting a red dye from red cabbage with an aqueous solution of potassium sulfite.
CONSTITUTION: Red cabbage is immersed in water containing ≤1% of potassium sulfite or in water containing ≤1% of potassium sulfite and ≤40 parts of alcohol, to elute the red dye existing in the cabbage. The solution containing the dye is added with sulfuric acid (equal molar amount to the potassium), concentrated, and added with an alcohol to give an aqueous solution containing ≥30% of the alcohol and the red dye.
