Abstract

PURPOSE: To keep the fresh green color of salted green vegetables, and to prevent the oxidation and putrefaction of the vegetables, by adding a mixture of sodium acetate and an inorganic alkali which are approved food additives to salt.
CONSTITUTION: Green vegetables such as cucumbers, turnips, okras, parsleys, leeks, spinaches, etc. are salted with a mixture of 3W30wt%, based on the vegetables, of salt, and 1W3wt% of an inorganic alkali such as calcium carbonate, sodium bicarbonate, sodium carbonate, etc. The mixture is adjusted to weakly acidic or alkaline condition (pH ≥about 5.5). When the amount of the salt is as low as about 3W10wt%, it is necessary to seal the salted vegetables in a sealed vessel and sterilize by heating.
