Abstract
PURPOSE: To obtain a food additive which can be added to food without denaturing the food and degrading the texture of the food, by adding a Ca salt, an Mg salt or their mixture to natural pectin or pectin separated from a natural raw material.
CONSTITUTION: Natural pectin or pectin separated from a natural raw material is compounded with a Ca salt, an Mg salt or their mixture, and if necessary, with starch and animal or vegetable proteins. The natural pectin is pref. the low-smell one obtained by extracting the oily component from organge peels with an organic solvent. For example, 500g of 40 mesh pectin powder on the market is mixed with about 100g of powdery calcium hydroxide or about 120g of powdery basic magnesium carbonate.
