Abstract
PURPOSE: The titled composition, consisting of a mixed agent containing an amino acid with a saccharide and a specific amount of a calcium salt as a discoloration inhibitor with little browning or quality change due to the Maillard reaction, and suitable for medicines, food, etc.
CONSTITUTION: A mixed agent of an amino acid with a saccharide obtained by incorporating an amino acid, e.g. glycine or alanine, with a saccharide, e.g. D-glucose or erythrose, and further adding a calcium salt, preferably calcium chloride, calcium citrate or calcium carbonate, as a discoloration inhibitor in an amount of 0.1W15wt%, preferably 0.5W3wt%, based on the mixed agent of the amino acid with the saccharide thereto.
EFFECT: The practical use of the mixed agent of the amino acid with the saccharide is possible.
