Abstract

PURPOSE: To prepare sufficiently sterilized curry powder having excellent flavor, by pulverizing raw spices in two steps, i.e. coarse pulverization and fine pulverization, and treating the coarse powder under wet and hot conditions.
CONSTITUTION: Various spices which are raw materials of curry powder, are pulverized to coarse powder wherein more than 85wt% of the powder is of the size of 10W55 mesh. The pulverization is pref. carried out separately, and the pulverized spices are mixed together. The mixture is preheated to 40W50°C, and then heated with pressurized steam at 0.4W2kg/cm2. After cooling, the heat-treated powder is further pulverized to fine powder wherein more than 95wt% of the powder is of the size of 40W200 mesh. If necessary, the product is aged and stored.
