Abstract

PURPOSE: Wheat flour is proviously dried until it gives itself a specific hue and mixed with other ingredients and water and they are subjected to homogenization treatment with shear force and sterilized by super-heat treatment, thus giving title soup with good thickness and texture.
CONSTITUTION: One part of wheat flour and one part of cool water are mixed and kneaded, then dried so that they are adjusted to 1YW3.5Y in hue, 7.5W9 lightness and 3W5 saturation according to JISZ8721 and 8723. The treated wheat flour is mixed with other ingredients and water by 1W10wt% based on the soup concentrate at a temperature of lower than 80°C and the concentrate is sheared with a homomixer and subjected to homogenization treatment with a homogenizer. Finally they are sterilized in a super high-temperature sterilizer at about 130W150°C for several seconds to give the objective soup.
