Abstract
PURPOSE: Specific processes are applied, thus producing dried bonito powders with good taste in high yield and in a short time.
CONSTITUTION: Raw products of dried bonito, as unboned bonito resulting from boiling or steaming raw bonitos from which guts are removed followed by broiling, are sterilized or not, then freezed to -100W-150°C, crushed to about 100W200 mesh, and dried with high frequency wave of 3W2450 MHz, 5W10 Kw.
EFFECT: Even when the water and oil contents of the raw products are high and bones and heads are included, the drying under drastic conditions is not required and powders with uniform particle sizes can be readily obtained.
