Abstract

Postupkom za hladno tretiranje koji je primer postupka za dobivanje fermentisanih sladnih pica gde se pivski materijal meša sa vodom i dobivena prekrupljena smeša se zagreva, i pivska šira se odvaja. Pivska šira se kuva, hladi i fermentira i dobiveno pivo se podvrgava završnom stupnju koji uključuje starenje radi dobivanja konačnog napitka. Poboljšanje obuhvata podvrgavanje piva hladnom stupnju koji obuhvata brzo hlađenje piva do temperature blizu njegove tačke mržnjenja tako da u njemu grade samo minimalne količine kristala leda. Dobiveno hladno pivo se tada na kratko izmeša sa suspenzijom piva koja sadrži kristale leda bez znatnijeg istovremenog povećanja u količini kristala leda u dobivenoj smeši. Konačno, tako tretirano pivo se ekstrahuje iz smeše.
