Abstract

La présente invention concerne un procédé de fabrication de cidre de pomme biologique, et plus précisément un procédé de fabrication de cidre biologique présentant une dispersité améliorée et sans additifs, et un cidre de pomme biologique fabriqué à partir de pommes entières en utilisant le procédé. Le procédé comprend les étapes suivantes : laver des pommes non pelées issues de l'agriculture biologique ; diviser chaque pomme en deux à quatre morceaux avec un couteau, et hacher les morceaux en utilisant un hachoir pour fruits ; mélanger une quantité représentant 3 % à 7 % en poids de jus de rhubarbe, qui est un inhibiteur naturel du brunissement, avec les pommes hachées, et extraire le jus du mélange en utilisant un broyeur colloïdal ; décanter le jus de pomme extrait ; remplir un récipient avec le jus de pomme décanté ; et stériliser le jus de pomme en utilisant des impulsions haute tension.
