本実施形態に係る果汁入り容器詰紅茶飲料(以下「本紅茶飲料」と称する)は、果汁を10~90質量%含有する果汁入り容器詰紅茶飲料であって、テオガリンの含有量が所定範囲にあり、かつ、カリウムの含有量に対するテオガリンの含有量の比率(テオガリン/K)が所定範囲にあることを特徴とする果汁入り容器詰紅茶飲料である。
紅茶抽出液は、例えば紅茶葉を抽出用液に浸漬させて撹拌した後、固液分離手段によって紅茶葉を除去して得ることができる。
但し、市販の紅茶抽出液(エキス含む)を使用することもできる。
紅茶の茶期や形状、産地等、紅茶の種類は、特に限定するものではないが、本紅茶飲料においては、特にテオガリン量を所望範囲に調整することを目的としてその種類を選択するのが好ましい。例えば葉の大きな茶葉はテオガリン含有量が大きい傾向があり、例えばダージリンやニルギリなどはテオガリン含有量が多い茶葉であり、逆にウバやディンブラなどはテオガリン含有量が少ない茶葉である。よって、このような観点に基づいて、茶葉の種類を選択すると共に、必要に応じて複数の種類の茶葉を混合することにより、所望のテオガリン含有量に調整することができる。
テオガリン含有量を目安に、適度な香味を維持しつつ、液色変化抑制を図る観点によると、10~90℃、特に20~80℃、中でも30~70℃で抽出を行うのが好ましい。
但し、抽出方法及び抽出条件等を特に限定するものではなく、例えば加圧抽出を行うこともできる。
抽出に用いる湯水は、純水、硬水、軟水、イオン交換水、天然水などのほか、アスコルビン酸含有水溶液及びpH調製水等を例示することができる。
湯水にアスコルビン酸ナトリウム等の有機酸又は有機酸塩類を添加してもよい。
本紅茶飲料に加える果汁の種類は特に限定するものではない。例えばオレンジ、ピーチ、ホワイトグレープ、りんご、レモン、いちご、グレープフルーツ、マンゴー、梨、赤ブドウ、みかん、さくらんぼ、日向夏などを挙げることができ、本紅茶飲料においては、特にカリウム量やマグネシウム量を所望範囲に調整することを目的としてその種類と含有量を選択するのが好ましい。

本紅茶飲料における果汁量(日本農林規格(JAS)準拠)は10~90質量%であることが重要である。
本発明は、果汁を多く含む果汁入り紅茶飲料特有の課題を解決するものである。すなわち、果汁を10質量%以上含む紅茶飲料であれば、経時的に色が変色するという問題が顕著となり、本発明によればこのような課題を解決することができる。
ただし、本紅茶飲料における果汁量は、本格的な果汁の香味を有し、紅茶との相性、経時的な色調変化抑制を勘案し、20質量%以上、80質量%以下であるのが好ましく、特に30質量%以上、70質量%以下であるのがより好ましい。
本紅茶飲料における果汁Brix/紅茶Brixは、6~90であるのが好ましい。6以上であれば、適度な紅茶感があり好ましい一方、90以下であれば、適度な果汁感と経時的色調変化抑制の点から好ましい。
よって、かかる観点から、本紅茶飲料における果汁Brix/紅茶Brixは、6~90であるのが好ましく、特に14以上、50以下、その中でも特に20以上、35以下であるのがさらに好ましい。
なお、本紅茶飲料の果汁Brixは果汁の種類、含有量から調整が出来、紅茶由来のBrixは、茶葉の種類、抽出温度、抽出時間等により調整することができる。
テオガリン(Theogallin,3-galloylquinic acid)は、渋味様の味を呈し、本格的な紅茶様の香味の形成に大きく影響する。
本紅茶飲料におけるテオガリン含有量は10ppm~24ppmであることが重要である。テオガリン含有量が10ppm以上であれば、渋味が適度にあり、果汁を多く含んでいても、本格的な紅茶感を得ることができ、果汁感のみを突出させることがない。一方、テオガリン含有量が24ppm以下であれば、渋味が強くなり過ぎて紅茶感が突出するようなことがない点で好ましい。
かかる観点から、テオガリン含有量は10ppm~24ppmであることが重要であり、12ppm以上、18ppm以下であるのが好ましく、中でも13ppm以上、15ppm以下がさらに好ましい。
前述のように選定した茶葉を単独或いは任意に組み合わせ使用することにより、テオガリン含有量の調整が可能である。
また、抽出方法及び抽出条件によってもテオガリン含有量の調整が可能である。例えば抽出温度の調整によってテオガリン含有量を調整することができる。
さらに天然由来のテオガリンを添加してテオガリン含有量を調整することもできる。
本紅茶飲料におけるカリウム含有量は、120ppm~1500ppmであるのが好ましい。120ppm以上であれば、本格的な果汁感を感じることができる一方、1500ppm以下であれば、紅茶感を損なうこともない。
よって、かかる観点から、カリウム含有量は120ppm~1500ppmであるのが好ましく、特に190ppm以上、700ppm以下、その中でも特に300ppm以上、480ppm以下であるのがさらに好ましい。
カリウム含有量は、前述のように果汁の種類が大きく影響するため、果汁の種類とその量により調整することができる。また、精製したカリウムを添加して調整することも可能である。
本紅茶飲料においては、香味のバランスを維持しつつ、経時的な液色変化を少なくする観点から、カリウム含有量に対するテオガリン含有量の比率を調整することが重要である。
すなわち、本紅茶飲料においては、カリウム含有量に対するテオガリン含有量の比率(テオガリン/K)が0.015~0.100であることが重要である。
本紅茶飲料において、テオガリン/Kが0.015~0.100であれば、香味のバランスを維持しつつ、経時的な液色変化を抑制することができる。
かかる観点から、本紅茶飲料においては、カリウム含有量に対するテオガリン含有量の比率(テオガリン/K)が0.015~0.100であることが重要であり、中でも0.020以上、0.070以下、特に0.030以上、0.050以下であるのが好ましい。
本紅茶飲料におけるマグネシウム含有量は、10ppm~40ppmであるのが好ましい。10ppm以上であれば、香り立ちがよく、しかも水っぽい印象を与えることがない一方、40ppm以下であれば、香り立ちに欠けることもなく、後味が悪くなることもない。
よって、かかる観点から、本紅茶飲料におけるマグネシウム含有量は10ppm~40ppmであるのが好ましく、特に15ppm以上、25ppm以下、その中でも特に17ppm以上、20ppm以下であるのがさらに好ましい。
マグネシウム含有量は、前述のように果汁の含有量が大きく影響するため、果汁の含有量とその種類により調整することができる。また、精製したマグネシウムを添加して調整することも可能である。
本紅茶飲料においては、香味のバランスを維持しつつ、経時的な香味変化を少なくする観点から、マグネシウム含有量に対するテオガリン含有量の比率を調整するのがさらに好ましい。
すなわち、本紅茶飲料においては、マグネシウム含有量に対するテオガリン含有量の比率(テオガリン/Mg)が0.4~1.7であるのが好ましい。
本紅茶飲料において、テオガリン/Mgが0.4~1.7であれば、香味のバランスを維持しつつ、経時的香味変化をさらに抑制することができる。
かかる観点から、本紅茶飲料においては、マグネシウム含有量に対するテオガリン含有量の比率(テオガリン/Mg)は0.4~1.7であるのが好ましく、中でも0.5以上、1.2以下、特に0.6以上、0.9以下であるのがさらに好ましい。
本紅茶飲料におけるテアフラビン類含有量は、2ppm~10ppmであるのが好ましい。2ppm以上であれば、経時的色調変化と、適度な紅茶の呈味を有する点で好ましい一方、10ppm以下であれば、経時的色調変化が抑制されつつ、紅茶と果汁のバランスを有する点で好ましい。
よって、かかる観点から、本紅茶飲料におけるテアフラビン類含有量は、2ppm~10ppmであるのが好ましく、特に4ppm以上、8ppm以下、その中でも特に6ppm以上、7ppm以下であるのがさらに好ましい。
なお、テアフラビン類含有量は、茶葉の種類、抽出温度、抽出時間等により調整することができる。
本紅茶飲料においては、適度な紅茶の渋味と香味、経時的な色調変化抑制の観点から、テアフラビン類含有量に対するテオガリン含有量の比率を調整するのがさらに好ましい。
すなわち、本紅茶飲料においては、テアフラビン類含有量に対するテオガリン含有量の比率(テオガリン/テアフラビン類)が1~15であるのが好ましい。本紅茶飲料において、テオガリン/テアフラビン類が1~15であれば、適度な紅茶感と経時的色調変化を少なくすることができる。
かかる観点から、本紅茶飲料においては、テアフラビン類含有量に対するテオガリン含有量の比率(テオガリン/テアフラビン類)は、1~15であるのが好ましく、特に1.5以上、5以下、その中でも特に1.85以上、2.5以下であるのがさらに好ましい。
本紅茶飲料における比重は、1.019~1.074であるのが好ましい。1.019以上であれば、甘味があり、本格的な果汁感が得られ好ましい一方、1.074以下であれば、甘味が強すぎず香味的に好ましい。
よって、かかる観点から、本紅茶飲料における比重は、1.019~1.074であるのが好ましく、特に1.032以上、1.061以下、その中でも特に1.036以上、1.053以下であるのがさらに好ましい。
なお、本紅茶飲料の比重は、果汁の種類、果汁の含有量、糖類の量により調整することができる。
本紅茶飲料におけるBrix(Bx)は、5%~18%であるのが好ましい。5%以上であれば、甘味があり、本格的な果汁感が得られ好ましい一方、18%以下であれば、甘味が強すぎず香味的に好ましい。
よって、かかる観点から、本紅茶飲料におけるBxは、5%~18%であるのが好ましく、特に8%以上、15%以下、その中でも特に9%以上、13%以下であるのがさらに好ましい。
なお、本紅茶飲料のBxは、果汁の種類、果汁の含有量、糖類の量により調整することができる。
本紅茶飲料は、紅茶抽出液(エキス含む)と、果汁と、その他の添加物とを混合して調合し、容器充填及び殺菌行って製造することができる。
紅茶抽出液(エキス含む)に果汁、その他の添加物、例えば甘味料、酸味料、酒石酸やその他の配合物、例えば水(純水、硬水、軟水、イオン交換水、天然水その他)、アスコルビン酸、アスコルビン酸ナトリウム、重曹、糖類、デキストリン、香料、乳化剤、安定剤、或いはその他の呈味原料などのいずれか或いはこれらのうち二種以上の組合わせを添加し、主にpH調整、濃度調整、味の調整を行うようにすればよい。
加熱殺菌は、缶飲料であれば、例えば95℃に加熱(ホットパック)した後充填し、転倒殺菌を行う方法が挙げられる。必要に応じ、充填後、レトルト殺菌(例えば、適宜加圧下(1.2Kg/cm2など)、121℃で7分間加熱殺菌する。)を行う方法、プラスチックボトル飲料の場合にはUHT殺菌(調合液を120~150℃で1秒~数十秒保持する。)を行っても差し支えない。
本発明において用いられる容器は、缶、ガラスビン、プラスチックボトルなど特に限定されないが、透明容器とりわけ透明プラスチック容器(PET容器)を用いるのが好ましい。
前述のように、果汁を10~90質量%含有する果汁入り容器詰紅茶飲料において、テオガリン含有量を10ppm~24ppmに調整し、且つカリウムの含有量に対するテオガリンの含有量の比率(テオガリン/K)を0.015~0.100に調整することにより、果汁入り容器詰紅茶飲料における経時的な色の変化を抑制することができる。
本発明において「容器詰紅茶飲料」とは、容器に詰めた紅茶飲料の意であるが、同時に希釈せずに飲用できる紅茶飲料の意味でもある。
また、「テアフラビン類」とは、テアフラビン(TF)、テアフラビン3-ο-ガレート(TF3-G)、テアフラビン3’-ο-ガレート(TF3'-G)、及びテアフラビン3,3'-ジ-ο-ガレート(TF3,3'-G)を示し、その量はこれらの合計量の意味である。
「果汁Brix」とは、本紅茶飲料に含まれる、果汁のショ糖換算したときの果汁の濃度をいう。
「紅茶Brix」とは、ビタミンCなどの添加物を含まない、ショ糖換算した時の紅茶の濃度をいう。
実施例及び比較例で得られた容器詰紅茶飲料を、0.2μm親水性PTFEフィルター(日本ミリポア(株))で濾過した後、以下の条件にてUPLCを用いて、テオガリンを定量した。
装置:ACQUITY UPLC/PDAシステム(日本ウォーターズ株式会社)、
移動相(A液):0.1%リン酸水溶液、
移動相(B液):アセトニトリル、
グラジエント:溶出液B 0%(0分)→0%(1分)→3%(3.5分)、
流速:0.5ml/min、
検出:UV275nm、
サンプル注入量 :5μl、
カラム温度:40℃
Andrew P. Nelsonらの方法(Andrew P. Nelson,Rodney J. Green, Karl V. Wood,Mario G. Ferruzzi,Journal of Chromatography A,1132(2006)132)に準拠し、テアフラビン類の定量を行った。
実施例及び比較例で得られた容器詰紅茶飲料を50%アセトニトリルで希釈、定容後、HPLC法(高速液体クロマトグラフ法)により測定した。
実施例及び比較例で得られた容器詰紅茶飲料を秤取し、1%塩酸で抽出し、ろ過をした。そのろ液を定容し、原子吸光法により測定した。
実施例及び比較例で得られた容器詰紅茶飲料を秤取し、1%硝酸で抽出し、ろ過をした。そのろ液を定容し、ICP発光分析法により測定した。
実施例及び比較例で得られた容器詰紅茶飲料のBrixから、20℃における糖液の比重を参考資料より求めた(「最新ソフトドリンクス」、p1032、光琳社発行)。
各実施例・比較例の条件で、茶葉のみを抽出・濾過して(果汁・糖類・酸味料添加前)抽出液を得、この抽出液をBrix測定装置(アタゴ社製DD-7)で測定し、得られた
数値を、各実施例・比較例における最終メスアップ量に換算して、表に示した。
測定装置の温度を所定の温度に調整し、測定装置(屈折計)を校正し、実施例及び比較例で得られた容器詰紅茶飲料(サンプル)を測定装置のプリズム上に薄く塗布し、測定(機器の表示値を記録)した。
pHメーターをpH標準溶液による校正を実施し、実施例及び比較例で得られた容器詰紅茶飲料(サンプル)をビーカーに採取し、pHメーターのガラス電極をサンプル中に挿入し、測定(機器の表示値を記録)した。
紅茶(スリランカブレンド)35gに純水1050mL(30倍)を加え、60℃で3分間抽出した。その際、1分毎に各15秒間ずつ撹拌しながら、紅茶成分を抽出した。得られた紅茶抽出液を20℃まで冷却した後、遠心分離を用いて微細濾過し、濾過して得られた紅茶抽出液に、ビタミンC(「VC」)3g、ピーチ濃縮透明果汁1200g(ストレート換算)を加えたほか、クエン酸、グラニュー糖を加え、pH3.8になるように重炭酸ナトリウムを加え、さらに香料10gを加え、10000gになるように純水でメスアップした。
このように調合した紅茶飲料を、95℃達温まで加熱して殺菌した後、PETボトル容器に充填し冷却して、容器詰紅茶飲料(サンプル)を得た。
紅茶葉の量及び果汁の種類と量などを表1又は表2に示すように変更した以外は、実施例1と同様にして容器詰紅茶飲料(サンプル)を得た。
なお、果汁の量はすべてストレート換算量である。
紅茶由来の原料として、実施例1と同様に得られた紅茶抽出液と、紅茶エキス(スリランカ産の紅茶葉を使用。92℃で20分間抽出、その後冷却、微細濾過後、15Brixまで濃縮したもの)とを使用するとともに、果汁の種類と量(ストレート換算)などを表1に示すように変更した以外は、実施例1と同様にして容器詰紅茶飲料(サンプル)を得た。
実施例1~9及び比較例1~6で得られた飲料(温度25℃)について、5人の熟練した審査官(パネラー)が、果汁感、紅茶感、バランス、経時色調、総合評価の5項目について以下の基準で1~4の4段階で点数を付け、5人の平均点が3.5以上を「◎」、3以上3.5未満を「○」、2以上3未満を「△」、1以上2未満を「×」として評価した。
果汁の香味、濃度感について次の基準で評価した。
4:特に良い
3:良い
2:普通
1:物足りない
紅茶の風味、苦味や渋味の程度について次の基準で評価した。
4:特に良い
3:良い
2:普通
1:悪い
果汁感と紅茶感のバランスについて次の基準で評価した。
4:特にバランスがよい
3:バランスがよい
2:普通
1:悪い
実施例及び比較例で得られた容器詰紅茶飲料を、温度25℃、湿度30%の日の当たらない環境下で60日間保存した後、パネラーの目視にて褐変などの色の変化を観察評価した。
4:特に良好
3:良好
2:僅かに褐変化
1:褐変化
香味及び経時の各評価を勘案した総合的な飲料としての出来具合について次の基準で評価した。
4:特によい
3:よい
2:普通
1:よくない
表1及び表2の結果、果汁を多く含む果汁入り容器詰紅茶飲料においても、テオガリン量と、カリウムの含有量に対するテオガリンの含有量の比率(テオガリン/K)を規定することにより、適度な果汁感と紅茶感を併せ持ちながら、両者のバランスがよく、しかも経時的色調変化の少ない飲料を得られるということが分かった。
より具体的には、テオガリンの含有量を10ppm~24ppmmの範囲に規定し、且つカリウムの含有量に対するテオガリンの含有量の比率(テオガリン/K)を0.015~0.100に規定することにより、果汁を10~90質量%含有する果汁入り紅茶飲料であっても、タンナーゼ処理などの酵素処理を行うことなく、経時劣化を抑えることができ、しかも紅茶の味(紅茶感)及び果汁の香味(果汁感)を十分に有する果汁入り容器詰紅茶飲料を得ることができるものと考えることができる。
このような点からすると、テアフラビン類含有量に対するテオガリン含有量の比率(テオガリン/テアフラビン類)が1~15であれば、適度な紅茶感を持ちながら、さらに経時的色調変化の少ない飲料を得ることができるものと考えられる。
紅茶葉の量、及び果汁の種類と量などを表3に示すように変更した以外は、実施例1と同様にして容器詰紅茶飲料(サンプル)を得た。
なお、果汁の量はすべてストレート換算量である。
実施例10~17で得られた飲料(温度25℃)については、上記と同じ5人の審査官(パネラー)が、香り立ち、厚み後味、経時香味、総合評価の4項目について以下の基準で1~4の4段階で点数を付け、5人の平均点が3.5以上を「◎」、3以上3.5未満を「○」、2以上3未満を「△」、1以上2未満を「×」として評価した。
鼻に抜ける香り立ちについて次の基準で評価した。
4:特に良い
3:良い
2:普通
1:物足りない
厚み(水っぽさがない)と後味について次の基準で評価した。
4:特に良い
3:良い
2:普通
1:悪い
実施例及び比較例で得られた容器詰紅茶飲料を、温度25℃、湿度30%の日の当たらない環境下で60日間保存した後、香味の変化について次の基準で評価した。
4:特に良好
3:良好
2:僅かに劣化
1:劣化顕著
香味及び経時の各評価を勘案した総合的な飲料としての出来具合について次の基準で評価した。
4:特によい
3:よい
2:普通
1:よくない
このような点からすると、香り立ち、厚み後味、経時香味などの観点を加味すると、マグネシウム含有量に対するテオガリン含有量の比率(テオガリン/Mg)が0.4~1.7であるのが好ましく、中でも0.5以上、1.2以下、特に0.6以上、0.9以下であるのがさらに好ましいと考えられる。
Claims (4)
- 果汁を10~90質量%含有する果汁入り容器詰紅茶飲料であって、 テオガリンを10ppm~24ppm含有し、且つカリウムの含有量に対するテオガリンの含有量の比率(テオガリン/K)が0.015~0.100であることを特徴とする果汁入り容器詰紅茶飲料。
- マグネシウムの含有量に対するテオガリンの含有量の比率(テオガリン/Mg)が0.4~1.7であることを特徴とする請求項1記載の果汁入り容器詰紅茶飲料。
- 果汁を10~90質量%含有する果汁入り容器詰紅茶飲料の製造方法であって、
テオガリン含有量を10ppm~24ppmに調整し、且つカリウムの含有量に対するテオガリンの含有量の比率(テオガリン/K)を0.015~0.100に調整することを特徴とする果汁入り容器詰紅茶飲料の製造方法。 - 果汁を10~90質量%含有する果汁入り容器詰紅茶飲料における経時的な色の変化の抑制方法であって、
