Abstract

 本発明は、水分散性良好なグルテンを提供することである。またグルテンの分散液を用いることで活性グルテンやグルテン含有食品、グルテンゲルを効率良く製造する方法を提供すること、更に、簡便にグルテンの分散液を調製し、これを加水分解することでグルテン加水分解物を効率よく製造する方法を提供することを課題とする。  ガラクツロン酸含有水溶性多糖類をグルテンと混合することで、本来は水中で凝集塊を形成するグルテンを、容易に分散させることができる。こうして調製されたグルテン分散液を用いることで、効率よく活性グルテンやグルテン含有食品及びグルテンのゲルを製造すること、グルテンの加水分解物を簡便な操作で効率的に、しかも安定的に調製することが可能となる。
