Description
本發明是有關具有風味改善性能之新穎化合物、含有此等化合物之組成物、及含有此等組成物之風味改善劑。同時本發明是有關具有風味改善性能之新穎化合物及含有香料之香料組成物。再者本發明係有關含有前述風味改善劑及香料組成物之任一種的飲食品、醫藥用品、口腔用製品等。
近年來由於健康取向的增加而對無糖/低卡路里(低熱量)或無卡路里之飲食品有非常高之期待。如此之飲食品雖具有減肥取向或對肥胖對策、或是預防蛀牙等對健康有益之點,但從美食嗜好之觀點而言,畢竟甜味是不可欠缺的。另一方面,具有甜味之物質,已知有糖醇或高甜度之甜味料(又稱為人工甜味料),且已有很多之研究報告。此等之糖醇或高甜度甜味料是為了提昇甜味而成為砂糖之替代品,其多用於上述飲食品中,但在此等甜味料之中也被指出具有砂糖所沒有之缺點。例如,得不到深入之味道,感受不到醇味,尤其在之後的餘味中會殘留膩味或嗆味等。
再者,自以往在品嚐飲食品時,即嘗試各種使感受到美味之方法。此等方法之一,即對飲食品添加添加物,例如,已有報導對賦予飲食品之醇味、減輕餘味或澀味等有效之添加物。例如作為能滿足飲食品風味的添加劑,有桔皮苷(hesperidin)配糖體(參照專利文獻1:日本特開平
11-318379號公報)及茶成分之一的茶胺酸(theanine)的報告(參照專利文獻2:日本特開平9-313129號公報)。
然而,前者之風味改善劑雖可見到對殘餘膩味的改善效果,然而對嗆味等殘留之點、得不到深入之味、感受不到醇味之點等方面則仍得不到充分之改善效果。又,後者之風味改善劑在廣範圍之飲食品中雖是適用之物質,但在風味改善方面卻不能說有充分之效果。
在如此背景下,本發明期望能提供可以消除餘味、改善嗆味及量感等,充分改善或增強在口腔內所感受的風味,提高飲食品等之嗜好性的新穎風味改善劑。再者,本發明期望能提供例如,增強或改善燒烤感、天然感、爽快感及醇味等之味道而賦予深入之味道,至少風味改善劑本身之使用量少量也可以發揮優異之風味改善效果之新穎風味改善劑。同時,本發明期望除了可以提供改善糖醇類及高甜度甜味料之餘味的膩感、嗆味之殘留、量感不足等之缺點,使消除餘味而變成良好之外,尚且可以改善飲料、其他食品的醇味或所謂的賦予量感之新穎的風味改善劑。
本發明人等以解決前述課題為目的而進行各種研究的期間,將特定之縮醛化合物添加到含有糖醇類及高甜度甜味料之飲料中之時,意外獲得能解決此等所有之缺點,而得到有格外優異風味之飲料的知識。而另外發現此縮醛化合物依據其添加量而對廣範圍之飲食品賦予苦味、或增強或改善燒烤感、天然感、爽快感或醇味等之風味而有賦予
深入之風味等的風味改善效果。本發明人等當決定此縮醛化合物之結構時,確認該化合物為文獻中所未記載之化合物。本發明人等根據此研究成果,經反覆研究遂完成本發明。
亦即,本發明係有關以下所示之化合物、含此化合物之組成物、風味改善劑、香料組成物及含有此等組成物之飲食品、醫藥品、口腔用製品等。
[1]5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛(5-hydroxymethyl-2-furaldehyde bis(5-formylfurfuryl)acetal)。
[2]含有0.1重量%以上之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之組成物。
[3]含有0.7重量%以上之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之組成物。
[4]含有5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛作為有效成分之風味改善劑。
[5]在[4]所述之風味改善劑中,復含有香料。
[6]在[4]或[5]所述之風味改善劑中,5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為0.1重量%以上。
[7]在[4]或[5]所述之風味改善劑中,5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為0.7重量%以上。
[8]含有5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛與香料之香料組成物。
[9]在[8]所述之香料組成物中,5-羥甲基-2-糠醛二(5-
甲醯基糠基)縮醛之含量為0.000001至50重量%。
[10]在[8]所述之香料組成物中,5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為0.00001至10重量%。
[11]一種飲食品,其係含有[4]至[7]中任一項所述之風味改善劑或是[8]至[10]中任一項所述之香料組成物。
[12]在[11]所述之飲食品中,5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為1ppb至1000ppm。
[13]一種醫藥品,其係含有[4]至[7]中任一項所述之風味改善劑或是[8]至[14]中任一項所述之香料組成物。
[14]在[13]所述之醫藥品中,5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為1ppb至1000ppm。
[15]一種口腔用製品,其係含有[4]至[7]中任1項所述之風味改善劑或是[8]至[14]中任1項所述之香料組成物。
[16]在[15]所述之口腔用製品中,5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為1ppb至1000ppm。
其中,在本說明書中所謂的「風味改善劑」是指改善或緩和如不佳之風味或妨害嗜好之感覺,同時增強良好風味提高嗜好性,具有使原本既有味道及香味朝良好方向改善之效果者,「香料組成物」是指賦予香味者。
依本發明,可以提供能改善飲食品、醫藥品、口腔用製品等之風味的風味改善劑。依本發明之較佳態樣,藉由將此風味改善劑摻配到飲食品中,不僅可以消除飲食品之餘味或改善量感,更可以賦予燒烤感、天然感、爽快感及
醇味等,可以消除嗆味及殘餘之膩味。為此,藉由調配本發明之風味改善劑可以提高嗜好性高之飲食品。又,更增加在口腔內感受到之風味等,如感受到美味之飲食品般,具有極為實用之效果。
此外,藉由在醫藥品中摻配本發明之風味改善劑,可以改善不易服用之醫藥品。再者,藉由在口腔用製品中摻配本發明之風味改善劑,可以提供風味提升之口腔用製品。
又,依本發明,可以提供在飲食品、醫藥品、口腔用製品等附有所期望之香味,同時可以改善此等風味之香料組成物。
以下詳細說明本發明。
首先,說明有關5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛。
此次,本發明人等最先發現之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛係如下述式所示:
其為無色或淡黃色之油狀物(以下,稱為「本發明之縮醛化
合物」)。本發明之效果係在具有苦味或呈現異味之以飲食品為首的醫藥品或口腔用製品等之中,藉由添加本發明之縮醛化合物,可以有效地改善此等之風味。依本發明之較佳態樣,藉由在飲食品等之中添加本發明之縮醛化合物,可以消除餘味或改善量感,再者可以賦予燒烤感、天然感、爽快感或醇味等。又,亦可以發揮改善令人不愉快之餘味或嗆味的效果。
雖在後述之參考例中詳細說明,但藉由官能試驗評估本發明之縮醛化合物的苦味界限值之結果,此值為1ppm(0.0001%)。相對於此,在與此類似物質的下述式2或式3所示之化合物中,
即使是1000倍之濃度(0.1%)也沒有感覺到苦味。又,式2及式3之化合物已有報導任一種都呈現有令人不愉快之味道(日本食品工業學會誌,第27卷、第7號、1980年)。由此等事實可以理解,本發明之縮醛可以改善所存有之苦味或異味、及由此所致之味道的風味改善效果,並不是藉由結構而可預測為本發明之縮醛化合物中特有物質之效果。
如此之本發明的縮醛化合物,係可以將上述式(2)所示
之5-羥甲基-2-糠醛在酸觸媒的存在下藉由攪拌而合成。5-羥甲基-2-糠醛是習知化合物,係由東京化成工業株式會社所販售。又,酸觸媒可以使用非水用強酸性陽離子交換樹脂、硫酸、鹽酸等。反應例如在0至20℃左右之低溫條件下進行為宜,以與脫水劑共存一面脫水一面反應為佳。反應後依常法之分離精製可以得到目的化合物。具體之合成方法,係如在實施例1所示。又本發明之縮醛化合物,可以用後述方法調製之本發明的組成物中單離而得。
本發明之組成物是含有本發明之縮醛化合物0.1重量%以上。由於本發明之組成物是含有本發明之縮醛化合物0.1重量%以上,所以少量添加可以賦予風味改善效果,在飲食品等添加之際可以將因卡路里增加等之影響或因雜質混入等而著色或付與雜味等之問題控制在最小限度。為此本發明之組成物是有用之風味改善劑。組成物中之本發明的縮醛化合物的含有量不足0.1重量%之時,因添加量過少而得不到風味改善效果。又,大量添加該組成物時,會有卡路里增加或著色等之影響因而並不佳。本發明之組成物中縮醛化合物之含量,以0.10重量%以上為宜,較佳為0.7重量%以上,更佳為1重量%以上,特佳為5重量%以上,最佳為10重量%以上。
同時,本發明的風味改善劑,係改善或緩和如不佳之風味或妨礙嗜好性之感覺,又可以增強好的風味且提昇嗜好性,但此等好的風味、不好的風味或如妨礙嗜好之感覺,
例如有酸味、醇味、苦味、鹹味、甜味、美味、嗆味、澀味、辣味、香味、量感、質地、爽快感、苦味的消除、殘留之膩味等,但在本發明中對此等並無任何限定。
本發明之組成物可以再含有本發明縮醛化合物之載體。在此,作為載體者是指將上述縮醛化合物添加‧調配在任意之其他物質或物品時所常用之物質之意。具體的載體,可以列舉如液體載體、固體載體。前述之液體載體可列舉如:水、乙醇、含水乙醇、丙二醇、甘油、甘油三乙酸酯(triacetin)、苯甲醇(benzyl alcohol)、檸檬酸三乙酯(triethyl citrate)、油脂類等,前述固體載體可列舉如多糖類、加工澱粉等。在本發明中亦可使用習知之乳化劑、分散劑、懸濁劑等作為載體。
本發明之組成物是可以將含有糖類及水的混合液在酸性條件下,於80至220℃中加熱,從所得之加熱物中以溶劑萃取而得。
在此所使用之糖類可列舉如單糖類、雙糖類或三糖類以上之多糖類等。單糖類可列舉如果糖、葡萄糖、半乳糖、甘露糖等。雙糖類可列舉如蔗糖、乳糖、麥芽糖等。多糖類可列舉如纖維素、澱粉等。又,糖類亦可使用澱粉水解物、糖蜜及焦糖等之混合物。在此等糖類之中,亦以果糖、葡萄糖、蔗糖為佳,尤其以使用果糖為佳。此等之糖類可以使用單獨1種或亦可組合2種以上來使用。
糖類是以和適當量之水共加熱處理為宜,當不添加水時很難均勻加熱,但添加太多量時加熱時間變長而不經
濟。水之使用量係隨加熱方法等之不同而異。例如,藉由加熱回流之加熱處理時,相對於糖類之重量,水之使用量以100至300重量%為佳。同時。使用烤爐等開放系加熱處理時,相對於糖類之重量,水之使用量以10至50重量%為佳。
本發明之加熱處理是在酸性條件下進行,在此所使用之酸可為強酸亦可以是弱酸,但在藉由加熱回流之加熱處理時,以使用強酸為宜。強酸可列舉如:硫酸、鹽強、強酸性離子交換樹脂等。另一方面,使用烤爐等開放系加熱處理時,以使用弱酸為宜,弱酸可列舉如乙酸、乳酸、檸檬酸、磷酸等。藉由加熱回流加熱處理時,酸之添加量係以使混合液之pH成為約1至5為佳,較佳是使pH成為約1至3,更佳是使pH成為約1至2。另一方面,用開放系加熱處理時,酸之添加量係以使混合液之pH成為約1至5為佳,較佳是使pH成為約1至3,更佳是使pH成為約2至3。
加熱溫度是以80至220℃為佳。
加熱處理是進行到加熱物變成茶褐色或是黑褐色為止。加熱時間是隨加熱溫度、裝入之量、加水量、壓力、火力等之不同而異,很難嚴格規定,例如在藉由100℃加熱回流之加熱處理時,以3至8小時左右為宜。又,使用烤爐等開放系加熱處理時,在100至150℃之範圍以1至8小時左右為佳,在120℃則以5小時左右為佳。
加熱處理後,自所得之加熱物藉由溶劑萃取可以得到
本發明之組成物。同時,使用烤爐等開放系經加熱處理後,首先,用水稀釋加熱物後再進行溶劑萃取。
在此所使用之萃取溶劑,只要能萃取本發明之縮醛的溶劑就可以,而無特別限制。萃取溶劑之具體例,可以例舉如:甲醇、乙醇、丙醇、異丙醇等低級醇,1,3-丁二醇、丙二醇、二丙二醇、甘油等多元醇,乙醚、丙醚等之醚類,醋酸乙酯、醋酸丁酯等酯類,丙酮、乙基甲基酮等酮類,正己烷、苯等烴類,氯仿、二氯甲烷等鹵素溶劑等。此等可各使用單獨1種或組合此等2種以上。此等之中,以使用乙醚或醋酸乙酯為宜。萃取溶液之使用量並無特別限定,但例如相對於原料之糖類,實際上是使用自等量到10倍量(重量比)之溶劑來萃取。
所得之萃取液用水洗滌,並且使用無水硫酸鎂等除去水分後,藉由減壓濃縮到所預定之濃度可以得到本發明之組成物。同時因應需要,在此組成物中再添加前述載體,亦可以加工成所期望之形態。
依本發明之較佳態樣的話,本發明之組成物藉由在含有糖類及水之混合液中添加酸,於pH為1至5,較佳為pH 1至3,更佳為pH 1至2的酸性條件下,於約100℃下加熱回流約3至8小時,自所得加熱物中以醋酸乙酯萃取,即可以將其濃縮到所預期之濃度,或是,本發明之組成物是藉由在含有糖類及水之混合液中添加酸使pH為1至5,較佳為pH 1至3,更佳為pH 2至3的酸性條件下,在約100至150℃下在開放系加熱處理1至8小時,自所得加熱
物中以醋酸乙酯萃取,可以將其濃縮到所預期之濃度。
同時,自所得之組成物中單離本發明之縮醛化合物時,可以使用管柱層析法等一般精製方法進行。
如此所得之本發明組成物,可以適合作為摻配在飲食品、醫藥品、口腔用製品等之風味改善劑使用。
本發明之風味改善劑,因含有本發明之縮醛化合物作為有效成分,所以藉由摻配至自飲食品為首之醫藥品或口腔用製品等之中,可以改善此等之風味或嗜好性。
在本發明之風味改善劑中,上述縮醛化合物之含量雖無特別限制,但以0.1重量%以上為宜,較佳是0.7重量%以上,特佳是1重量%以上,更佳是5重量%以上,最佳是10重量%以上。縮醛化合物之含量為0.1重量%以上時風味改善效果高,少量之添加即可以得到所期望之效果。
本發明之風味改善劑,可以再含本發明之縮醛化合物的載體。在本發明之風味改善劑中可以使用之載體,可以和前述本發明之組成物中說明之相同例示者,自此等之中依風味改善劑之用途或形態而適當選擇就可以。
本發明之風味改善劑,係在改善香味之目的下,可以再含有香料。
香料可以使用天然香料、天然精油等之香料、或在飲食品中可使用之各種合成香料。較佳之香料,可列舉如:酯類、醇類、醛類、酮類、縮醛類、酚類、醚類、內酯類、呋喃類、烴類、酸類等之合成香料,及橙橘、檸檬、萊姆、
葡萄柚等柑橘類精油,由花調製之精油、薄荷類、綠薄荷類、香料(spice)油等之植物精油,可樂果(Kola unt)萃取物、咖啡萃取物、香草萃取物、可可亞萃取物、紅茶萃取物、綠茶萃取物、烏龍茶萃取物、香料類萃取物等油性萃取物以及此等之含油樹脂類、香精類、回收香等天然香料等、及由此等選出複數之香料以及精油之混合物。又,可以使用在「日本之食品香料化合物之使用實態調查」(平成12年度厚生科學研究報告書;日本香料工業會平成13年3月發行)、「合成香料 化學與商品知識」(1999年3月6日發行 印藤元一著 化學工業日報社)「Perfume and Flavor Chemicals(Aroma Chemicals)1,2」(Steffen Arcten der(1969)等所記載之香料。
本發明之風味改善劑中,香料之添加量係依所欲添加之飲食品、所使用之香料等而大幅變動,不能一概而定。即使使用極少量也會有效果,依情況也有添加極多量之情形,而無特別限制。
在本發明之風味改善劑中,只要可以逹成本發明之目的,亦可以與適當之調配劑共存。調配劑係只要不會完全妨礙本發明之風味改善劑的效果的話就可以而無特別之限制,可以使用飲食品、醫藥、口腔用製品中常用的添加劑。
具體上可以列舉如:酸味料、增量劑、抗氧化劑、色素、習知之防腐劑或抗菌劑、機能性物質、現存之風味改善劑、pH調整劑、乳成分、胺基酸或肽等含氮化合物等。此等調配劑可以調配單獨1種或2種以上之組合。上述調
配劑之調配量只要可以逹成本發明目的之量即可而無特別限制。
酸味料可以列舉如:醋酸、乳酸、檸檬酸等。又,增量劑可列舉如糖類、多糖類、加工澱粉、乾酪素、明膠、羧基甲基纖維素、卵磷酯等。
抗氧化劑已知有:丁基羥基甲苯、丁基羥基苯甲醚、檸檬酸、黃酮類酸、谷胱甘肽、硒、茄紅素、維生素A、維生素E、維生素C等,其他如吡咯并吡咯衍生物或由各種植物萃取物所得自由基清除劑(Free radical scavengers)、超氧化物歧化酶(superoxide dismutase)、或谷胱甘肽過氧化酶等具有抗氧化特性之酵素等,可以列舉此等。
色素已知有天然色素、對人體有益之有機合成色素等,具體可列舉如:木槿色素、越橘莓(Huckleberry)色素、李子色素、海苔色素、露莓(Dewberry)色素、葡萄果汁色素、黑莓色素、藍莓色素、桑椹(mulberry)色素、莫利洛黑櫻桃(morello cherry)色素、紅醋粟色素、洛甘莓(logan berry)色素、紅椒粉末、麥芽萃取物、芸香素、類黃酮、紫高麗菜色素、紅蘿蔔色素、紅豆色素、薑黃色素、橄欖茶、蔓越莓色素、綠藻粉末、番紅花色素、紫蘇色素、草莓色素、菊苣(chicory)色素、胡桃色素、紅麴色素、紅花色素、紫芋色素、蟲膠(lacc)色素、旋藻色素、洋葱色素、羅望子色素、辣椒色素、梔子花色素、焦糖色素、紫根色素、紫檀木色素、磷蝦色素、橙橘色素、胡蘿蔔素等。
習知之防腐劑或抗菌劑有安息香酸、安息香酸鈉、對羥基苯甲酸異丙酯、對羥基苯甲酸異丁酯、對羥基苯甲酸乙酯、對羥基苯甲酸甲酯、對羥基苯甲酸丁酯、對羥基苯甲酸丙酯、亞硫酸鈉、低亞硫酸鈉、焦亞硫酸鉀、山梨酸、山梨酸鉀、脫氫乙酸鈉、檜酚酮(thujaplicin)、土當歸萃取物、野茉莉(Styrax japonica)萃取物、茵陳蒿萃取物、烏龍茶萃取物、魚精蛋白萃取物、酵素分解薏仁萃取物、兒茶酚類、蘋果多酚、果膠分解物、殼聚糖、溶菌酶、ε-聚離胺酸等。
機能性物質是指有營養機能、或生態調節機能之物質、相關機能性物質例如可列舉如:二十二碳六烯酸(docosahexaenoic acid;DHA)、二十碳五烯酸甜苦辣(Eicosapentaenoic Acid;EPA)、含有DHA及/或EPA之魚油、亞油酸(linoleic acid)、γ-亞麻酸(linolenic acid)、α-亞麻酸、卵磷脂、二醯基甘油等之動植物油脂類或其衍生物、迷迭香、鼠尾草、紫蘇油、甲殼質、殼聚糖、蜂王膠(royal jelly)、蜂膠(propolis)等之動植物萃取物、維生素A、維生素D、維生素E、維生素F、維生素K、輔酶(coenzyme)Q10、α-硫辛酸(α-lipoic acid)等維生素類、輔酶及其衍生物、γ-谷維醇、兒茶酸、花色苷(anthocyanin)、異黃酮(isoflavone)、芸香苷(rutin)、綠原酸(chlorogenic acid)、茶黃素(theaflavin)等多酚類、難消化糊精等植物纖維類、巴拉金糖(palatinose)、木糖醇(xylitol)、寡聚糖等糖質、檸檬酸蘋果酸鈣等之鹽
類、酪蛋白磷酸胜肽(casein phosphopeptide,cpp)、乳鐵蛋白(lactoferrin)、乳性肽等源自乳蛋白之物質,乳酸菌類、γ-胺基丁酸、血紅素鐵等。
pH調整劑是指為使食品保持在適當pH範圍內而使用的物質或製劑之意,相關之pH調整劑可列舉如:己二酸、檸檬酸、檸檬酸三鈉、δ-內酯型葡萄糖酸、葡萄糖酸、葡萄糖酸鉀、葡萄糖酸鈉、琥珀酸、琥珀酸一鈉鹽、琥珀酸二鈉鹽、乙酸鈉、DL-酒石酸、L-酒石酸、DL-酒石酸氫鉀、L-酒石酸氫鉀、DL-酒石酸鈉、L-酒石酸鈉、碳酸鉀(無水)、碳酸氫鈉、碳酸鈉、二氧化碳、乳酸、乳酸鈉、氷醋酸、焦磷酸二氫二鈉、富馬酸、富馬酸鈉、DL-蘋果酸、DL-蘋果酸鈉、磷酸、磷酸氫二鉀、磷酸二氫鉀、磷酸氫二鈉、磷酸二氫鈉或其他之酸味料等。
乳成分除了生乳、牛乳、全脂奶粉、脫脂奶粉、鮮奶油等之外,尚有酪蛋白(Casein)、或乳清(whey)等之乳蛋白、以及由山羊或羊等之乳所得者、或此等之分解物等。
在本發明之風味改善劑中,亦可再與蔗糖素(sucralose)、環糊精、茶胺酸、桔皮苷配糖體、甘蔗萃取物等習知之風味改善劑共存。
如此之本發明風味改善劑,係針對本發明之縮醛化合物視需要而添加香料及調配劑並經調製而成。又,使用前述本發明之組成物替代本發明之縮醛化合物亦可以調製本發明之風味改善劑。
本發明之風味改善劑,雖其本身可以作為各種飲食品
的風味改善劑使用,但亦可以使用以酒精等溶劑稀釋而成的溶液。同時,亦可以使用以各種被膜劑處理而成之粉末狀、顆粒狀等。在作成粉末狀、顆粒狀等時,通常是與所使用之被膜劑混合,例如只要使用噴霧乾燥、凍結乾燥等方法即可。被膜劑例如有阿拉伯膠、普魯蘭多糖(Pullulan)、刺樹膠(tragacanth gum)、環糊精、糊精、明膠、加工澱粉等。再者,本發明之風味改善劑可以以膏狀、乳化物狀等任意形態來使用。同時,本發明之風味改善劑可以與各種調配劑與各種習知之香味素材混合而使用,同時亦可以與其他之食品用調合香料組成物適當混合使用。
其次說明本發明之香料組成物。
本發明之香料組成物的特徵是含有本發明之縮醛化合物與香料。本發明之香料組成物因為含有與香料共同具有風味改善效果之本發明的縮醛化合物,所以不僅賦與飲食品等所期望之香味,也可具有改善飲食品等風味的效果。
本發明之香料組成物中,本發明的縮醛化合物之含有量雖無特別限制,但由於少量添加即可以得到所期望之風味改善效果,故以0.000001至50重量%為宜,而以0.00001至10重量%較佳,以0.0001至5重量%更佳。
本發明之香料組成物中所使用之香料,係可以使用天然香料、天然精油等之香料或飲食品中可以使用之各種合成香料。香料之具體例子可以列舉與本發明之風味改善劑
的任意成分之例示者相同者。
又,本發明之香料組成物除了上述之外,因應需求亦可以再含有載體及調配劑。有關此等之具體例與其添加量以及香料組成物之調製方法,係與本發明之風味改善劑中所述者相同。
藉由將如此所調製之風味改善劑或香料組成物配入飲食品中,可以改善飲食品之風味。
配合風味改善劑之飲食品並無特別之限制,例如可列舉如:含有畜肉類、雞肉、魚貝類等作為原料之加工食品類、湯類、甜味料等之調味料類、撒在飯上之拌飯乾料類、速食食品、冷凍食品類、點心食品類、營養補助品類或營養飲料劑等之各種機能食品類、罐頭食品類、乳製品類、口香糖或糖果、軟糖、巧克力糖、烘烤糕點等糕點類、冷糕點類、茶、咖啡、可可亞、果汁飲料、運動飲料、碳酸飲料或蔬果飲料等清涼飲料、酒類、豆漿、乳酸菌飲料、青色菜汁(精力湯)等之飲料。上述甜味料並無特別限定,可列舉如砂糖、果糖、乳糖、葡萄糖、巴拉金糖、麥芽糖、海藻糖(trehalose)、山梨糖醇、赤蘚糖醇(Erythritol)、麥芽糖醇(maltitol)、還原巴拉金糖、木糖醇、還原乳糖(lactitol)、麥芽糖、寡糖、阿斯巴甜(Aspartame)、蔗糖素、乙醯磺胺酸鉀(Acesulfame potassium)、糖精(Saccharin)、甜菊(Stevia)、紐甜代糖(Neotame)、阿力
甜(Alitame)、索馬甜(Thaumatin)、新橙皮苷二氫查爾酮(Neohe speridine dihydrochalcone)、甘草等,亦可為使用此之無糖飲食品、無卡路里飲食品、低卡路里飲食品。本發明之風味改善劑或香料組成物物之使用量,係隨風味改善劑或香料組成物之種類、飲食品之種類、風味改善劑或香料組成物之適用方法、使用方法等之不同而異,例如相對於飲食品,一般是使用0.000001至20重量%左右,而以0.00001至10重量%左右之使用量更好。同時,在飲食品中所含有之本發明縮醛化合物之含量,以1ppb至1000 ppm為宜,以5ppb至500ppm較佳,以10ppb至100ppm更佳。
又,如此所調製之風味改善劑或香料組成物亦可調配到醫藥品內,藉此可改善醫藥品之風味。本發明之醫藥品是指在藥事法中所謂之醫藥品或醫藥部外用藥品之意。
調配風味改善劑或香料組成物之醫藥品並無特別之限定,可以列舉如液狀、顆粒狀及粉末狀之內服藥。本發明之風味改善劑或香料組成物之使用量,係隨風味改善劑或香料組成物之種類、醫藥品之種類、風味改善劑或香料組成物之適用方法、使用方法等之不同而異,例如相對於醫藥品,一般使用0.000001至20重量%左右,而以0.00001至10重量%左右之使用量更好。同時,在醫藥品中所含有之本發明縮醛化合物之含量,以1ppb至1000ppm為宜,以5 ppb至500 ppm較佳,以10ppb至100ppm更佳。
又,如此所調製之風味改善劑或香料組成物亦可以摻配到口腔用製品內,藉由此可以改善口腔用製品之風味。
調配風味改善劑或香料組成物之口腔用製品並無特別之限定,具體上可以列舉如各種漱口劑、各種刷牙劑等、維護口腔用口香糖、糖果、錠劑、膠囊、口腔噴劑、薄膜狀之口腔用製品等。本發明之風味改善劑或香料組成物之使用量,係隨風味改善劑或香料組成物之種類、口腔用製品之種類、風味改善劑或香料組成物之適用方法、使用方法等之不同而異,例如相對於口腔用製品,一般是使用0.000001至20重量%左右,而以0.00001至10重量%左右之使用量更好。同時,在口腔用製品中所含有之本發明縮醛化合物之含量,以1ppb至1000ppm為宜,以5ppb至500 ppm較佳,以10ppb至100ppm更佳。
同時,本發明之風味改善劑對廣範圍之風味改善有效,例如亦可以改善澀味、苦味或苦味之消除、餘味或膩人之餘味等之風味。
以下藉由實施例更具體地說明本發明。但本發明並不侷限在此等實施例。
將2.02g(16.0 mmol)之5-羥甲基-2-糠醛溶解到100ml之醋酸乙酯中,加入以200mg非水用強酸性陽離子
交換樹脂作為酸觸媒及少量之分子篩作為脫水劑,在4℃下攪拌並反應3天後,以濾紙過濾去除酸觸媒及分子篩並使反應停止,藉由蒸餾器進行減壓濃縮可得反應粗製物1.98g。此粗製物供進行矽膠管柱層析(己烷/醋酸乙酯=1:2),可以得到5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛47.1 mg(0.13 mmol,收率為2.33重量%)。

在實施例1所得之化合物7 mg中加入1g之乙醇,而調製由5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之0.7重量%乙醇溶液所成之風味改善劑。
在實施例1所得之反應粗製物300 mg中加入1g之乙醇,而調製由反應粗製物之30重量%乙醇溶液所調製之風味改善劑。5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含有量為0.7重量%。
以實施例1所得之反應粗製物作為風味改善劑。5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含有量為2.33重量%。
在蔗糖46.8g中加水120g,添加鹽酸0.8g在100℃中加熱回流4小時。放冷後以醋酸乙酯120ml反復萃取3次,所得萃取液用水50 ml洗淨。加入適量無水硫酸鎂脫水一晚後,藉由濾紙過濾除去硫酸鎂,用蒸發器減壓濃縮濾液而得到風味改善劑3.15g。藉由與實施例1相同之精製手法可由此風味改善劑中得到收率為4.6重量%之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛。
在果糖100g中加水30g,添加檸檬酸1g在開放系120℃中加熱5小時。於不固化程度下放冷後,用溫水200ml溶解,以醋酸乙酯200ml反復萃取3次,所得萃取液用水30ml洗淨。加入適量無水硫酸鎂脫水一晚後,藉由濾紙過濾除去硫酸鎂,用蒸發器減壓濃縮濾液而得到風味改善劑3.02g。藉由與實施例1相同之精製手法由此風味改善劑中可得到收率為1.9重量%之5-羥甲基-2-糠醛二(5-甲醯基
糠基)縮醛。
將55 mg實施例6的風味改善劑溶解到1 ml乙醇中,調製由風味改善劑5.5重量%之乙醇溶液所調製之風味改善劑。5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含有量為0.10重量%。
在果糖100g中加水30g,在開放系120℃中加熱5小時。於不固化程度下放冷後,用溫水200ml溶解,以醋酸乙酯200ml反復萃取3次,所得萃取液用水30 ml洗淨。加入適量無水硫酸鎂脫水一晚後,藉由濾紙過濾除去硫酸鎂,用蒸發器減壓濃縮濾液而得到風味改善劑2.84g。此風味改善劑中5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含有量為0.033重量%。
在果糖100g中加水30g,添加檸檬酸1g在開放系120℃中加熱5小時。於不固化程度下放冷後,用溫水100ml溶解,可得到風味改善劑170g。此風味改善劑中5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含有量為0.017重量%。
在果糖100g中加水30g,在開放系120℃中加熱5小時。於不固化程度下放冷後,用溫水100ml溶解,可得到風味改善劑163g。自此風味改善劑中得不到5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛。
將實施例1中所得之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛依表1之組成,與香料混合後用溶劑稀釋作為香料組成物。
表中巧克力香味是高砂香料工業社製的「E-25430」。
由表2之組成可得到無糖甜味料,將12g此無糖甜味料溶解到1 kg之離子交換水中,得到1.2重量%水溶液。在此水溶液300g中加入實施例2之風味改善劑60 mg,得到含風味改善劑0.02重量%之無糖甜味料的溶液試料。又,此無糖甜味料之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為0.00014重量%。
有關此試料於表3記載之項目,在與對照品比較之官能評估法中,藉由5名訓練有素之專門評審員,以對照品為0點,以下述方式給予-3點至+3點範圍之點數,進行官能評估。對照品是不添加風味改善劑(有添加乙醇)者。
此評估之結果如表3所示。表中之數字,係5名專門評審員之平均點數。
在實施例9中,除了使用實施例3之風味改善劑取代實施例2之風味改善劑之外,其餘與實施例9相同操作,調製含有風味改善劑之無糖甜味料之溶液。對此溶液採用與實施例9相同方法進行官能評估。
此評估結果示於表3。表中之數字是5名專門評審員之平均點數。
在市售品α G橙皮苷(hesperidin;東洋精糖株式會社製)300mg中加入1g水,作為風味改善劑。在實施例9之
無糖甜味料之水溶液300g中加入上述風味改善劑10mg和乙醇60mg,調製成含有0.001重量% α G橙皮苷、0.02重量%乙醇之無糖甜味料之溶液試料。此試料以與實施例9相同之方法進行官能評估。
此評估結果在表3中表示。表中之數字是5名專門評審員之平均點數。
在市售品900mg鉀明礬(NACALAI TESQUE株式會社製)中加入1g水,作為風味改善劑。在實施例9之無糖甜味料之水溶液300g中加入上述風味改善劑10mg和乙醇60mg,調製成含有0.003重量%鉀明礬、0.02重量%乙醇之無糖甜味料的溶液試料。此試料以與實施例9相同之方法進行官能評估。
此評估結果在表3中表示。表中之數字是5名專門評審員之平均點數。
實施例9與實施例10中使用之風味改善劑對令人不愉快之餘味與嗆味之改善,顯示優異效果。同時,在無糖甜味料使量感不足者也顯示優異之改善效果,可提高嗜好
性。相對於此,α G橙皮苷與鉀明礬對嗆味與量感缺乏效果,可謂改善效果不充分。
將表4之高甜味度甜味料溶解到離子交換水中,調製表4記載之濃度的高甜味度甜味料之水溶液,在各個水溶液中將實施例3之風味改善劑添加0.02重量%可得高甜味度甜味料之溶液試料。同時,此高甜味度甜味料之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為0.00014重量%。
表中之阿斯巴甜、蔗糖素、乙醯磺胺酸鉀、糖精、甜菊分別是由味之素株式會社製、三榮源FFI株式會社製、武田藥品工業株式會社製、大和化成株式會社製、東洋精糖株式會社製。
有關此試料於表5記載之項目,在與對照品比較之官能評估法中,藉由5名訓練有素之專門評審員,以對照品為0點,與實施例9相同給與-3點至+3點範圍之點數,進行官能評估。對照品是不添加風味改善劑(有添加乙醇)者。

實施例11中使用之風味改善劑,對於任一種高甜味度甜味料之令人不愉快的餘味與嗆味之改善,顯示有優異效果。同時,在高甜味度甜味料於量感不足者中也顯示優異之改善效果,可提高嗜好性。可知在實施例11使用之風味改善劑是優異之風味改善劑。
將表6之甜味料溶解到離子交換水中,調製表6記載之濃度的糖醇水溶液,在各個水溶液中將實施例3之風味改善劑添加0.02重量%而得糖醇之溶液試料。同時,此糖醇溶液之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為0.00014重量%。
表中之還原巴拉金糖、山梨糖醇、麥芽糖醇、木糖醇分別是由三井製糖株式會社製、日研化學株式會社製、東和化成工業株式會社製、Danisco日本株式會社製。
有關此試料於表7記載之項目,在與對照品比較之官能評估法中,藉由5名訓練有素之專門評審員,以對照品為0點,與實施例9相同給與-3點至+3點範圍之點數,進行官能評估。對照品是不添加風味改善劑(有添加乙醇)者。
其評估結果在表7中表示。表中之數字是5名專門評審員之平均點數。
在實施例12使用之風味改善劑,對任一種之糖醇都顯示對令人不愉快之餘味與嗆味之改善有優異效果。同時在糖醇於量感不足者中也顯示優異之改善效果,可提高嗜好性。可知在實施例12使用之風味改善劑為優異之風味改善劑。
在還原巴拉金糖400g中加入還原澱粉糖化物150g、水150g,一面加熱一面使完全溶解,加熱到170℃後,冷
卻至140℃。其次,添加0.35g之阿斯巴甜及實施例4之風味改善劑0.11g(0.02重量%),流入模具中成型,可得無糖糖果。同時,此無糖糖果之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛的含有量為0.00047重量%。
有關上述無糖糖果於表8記載之項目,在與對照品比較之官能評估法中,藉由5名訓練有素之專門評審員,以對照品為0點,與實施例9相同給與-3點至+3點範圍之點數,進行官能評估。同時,對照品是無添加風味改善劑者。
此之評估結果在表8中表示。表中之數字是5名專門評審員之平均點數。
在實施例13中,除了使用實施例6之風味改善劑(5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛的含有量1.9重量%)取代實施例4之風味改善劑之外,其與實施例13相同操作可得含有風味改善劑之無糖糖果。與實施例13相同地對此試料進行官能評估。

在市售的減肥可樂飲料300g中加入實施例2之風味改善劑30mg,可得含有風味改善劑0.01重量%之減肥可樂飲料。同時,此減肥可樂飲料之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含有量為0.00007重量%。
有關上述減肥可樂飲料之下述表9記載的項目中,與對照品比較之官能評估法,係藉由5名訓練有素之專門審查員,以對照品當作0點,以與實施例9相同給與-3點至+3點範圍之點數來進行官能評估。對照品是無添加風味改善劑(添加乙醇)者。
其評估結果在表9中表示。表中之數字是5名專門評審員之平均點數。
在實施例15中,除了使用實施例3之風味改善劑取代實施例2之風味改善劑之外,其餘與實施例15相同操作,可得含有風味改善劑之減肥可樂飲料,此飲料與實施例15同樣地進行官能評估。

使用實施例15、實施例16與實施例17之風味改善劑係賦予減肥可樂飲料爽快感與量感,再者,可以很理想地去除減肥可樂飲料中甜甜的餘味,而可提高嗜好性。
在市售的罐裝咖啡飲料300g中加入實施例2之風味改善劑60mg,可得含有風味改善劑0.02重量%之咖啡飲料。同時,此咖啡飲料之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含有量為0.00014重量%。
有關上述咖啡飲料在下述表10記載的項目中,與對照品比較之官能評估法,係藉由5名訓練有素之專門審查員,以對照品當作0點,以與實施例9相同給與-3點至+3
點範圍之點數來進行官能評估。同時,對照品是無添加風味改善劑(添加乙醇)者。

在實施例18中,除了使用實施例3之風味改善劑取代實施例2之風味改善劑之外,其餘與實施例18相同操作,可得含有風味改善劑之咖啡飲料,此飲料與實施例18同樣地進行官能評估。

在市售的柚皮苷(Naringin;東和產業株式會製)30mg中加入乙醇10g作為風味改善劑。依據實施例18,在試料罐咖啡300g中加入此風味改善劑60mg,調製成含有柚皮苷0.00006重量%、乙醇0.02重量%之咖啡飲料。此咖啡飲料與實施例18同樣地進行官能評估。
其評估結果在表10中表示。表中之數字是5名專門評審員之平均點數。
市售的苦樹萃取物(Picrasma quassioides extraction;東和產業株式會製)15mg中加入乙醇10g作為風味改善劑。依據實施例18,在試料罐咖啡300g中加入此風味改善劑60mg,調製成含有苦木萃取物0.00003重
量%、乙醇0.02重量%之咖啡飲料。此咖啡飲料與實施例18同樣地進行官能評估。
其評估結果在表10中表示。表中之數字是5名專門評審員之平均點數。
在試料罐咖啡300g中,加入依照在日本特開平11-103814號公報記載之參考例1調製之二雜左旋聚糖II(Diheterolevulosan)1.8g與乙醇60 mg,調製成含二雜左旋聚糖II 0.6重量%、乙醇0.02重量%之咖啡飲料。此咖啡飲料與實施例18同樣進行官能評估。
其評估結果在表10中表示。表中之數字是5名專門評審員之平均點數。
在試料罐咖啡300g中,加入依照在日本特開平11-103814號公報記載之參考例1調製之二雜左旋聚糖II 3.8g與乙醇60 mg,調製成含二雜左旋聚糖II 0.00127重量%、乙醇0.02重量%之咖啡飲料。此咖啡飲料與實施例18同樣進行官能評估。
其評估結果在表10中表示。表中之數字是5名專門評審員之平均點數。
實施例18與實施例19所使用之風味改善劑對咖啡飲料可消除餘味、賦予品質良好之苦味與烘烤感與量感,使嗜好性提高。另一方面,柚苷與苦樹萃取物與二雜左旋聚糖II之苦味品質有藥性苦感,嗜好性差。又,在二雜左旋聚糖II之添加量相對於實施例18之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛約為10倍的比較例12中,在風味上沒感覺到變化。由以上可知,在實施例18與實施例19中使用之風味改善劑為優異之風味改善劑。
在市售的香草冰淇淋100g中加入實施例4之風味改善劑10mg,可得含有風味改善劑0.01重量%之香草冰淇淋。同時,此香草冰淇淋中5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含有量為0.00023重量%。
有關上述香草冰淇淋之下述表11記載的項目,與對照品比較之官能評估法中,係藉由訓練有素之專門審查員5名,以對照品當作0點,以與實施例9相同給與-3點至+3點範圍之點數來進行官能評估。對照品是無添加風味改善
劑(添加乙醇)者。
其評估結果在表11中表示。表中之數字是5名專門評審員之平均點數。
在實施例20中使用的風味改善劑是賦予香草氷淇淋香草味感及量感,提高嗜好性。
將市售的COUVERTURE巧克力(純巧克力)100g隔水於50℃加熱使其溶解,在其中加入實施例4之風味改善劑30 mg,並攪拌之,溫度降到28℃左右後,再升溫到30℃左右進行溫度調節(Tempering)。其次,流到模具中成型,冷卻後,得到含有風味改善劑0.03重量%之巧克力試料。此巧克力之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含有量為0.00070重量%。
有關上述巧克力試料之下述表12記載的項目,與對照品比較之官能評估法中,係藉由5名訓練有素之專門審查員,以對照品當作0點,以與實施例9相同給與-3點至+3點範圍之點數來進行官能評估。對照品是無添加風味改善劑品。
此之評估結果在表12中表示。表中之數字是5名專門評審員之平均點數。
在實施例21中,除了加入含有實施例5之風味改善劑150mg取代實施例4之風味改善劑之外,其餘與實施例21相同操作,可得含有風味改善劑0.15重量%之巧克力,此巧克力之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含有量為0.0069重量%。此試料與實施例21同樣進行官能評估。
其評估結果在表12中表示。表中之數字是5名專門評審員之平均點。
在實施例21與實施例22中使用的風味改善劑是賦予巧克力試料之量感及可可味感,也消除甜味提高嗜好性。另外實施例22顯示有強烈之苦味感。
將市售的Couverture巧克力(純巧克力)100g隔水於50℃加熱使其溶解,在其中加入含實施例8之香料組成物100mg,並攪拌之,溫度降到28℃左右後,再升溫到30℃
左右,得到含有香料組成物0.1重量%之巧克力試料。此巧克力之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含有量為0.00070重量%。此試料與實施例21同樣進行官能評估。
其評估結果在表13中表示。表中之數字是5名專門評審員之平均點數。
實施例23之香料組成物是賦予巧克力試料之量感、可可味感,同時可有效地提高香味及消除甜味。
在將市售的2倍濃縮沾麵醬汁用水稀釋4倍的汁液300ml中,加入實施例3之風味改善劑60mg,可得含有風味改善劑0.02重量%之沾麵醬汁試料。此沾麵醬汁之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為0.00014重量%。
有關上述沾麵醬汁試料之下述表14記載的項目,與對照品比較之官能評估法中,係藉由5名訓練有素之專門審查員,以對照品當作0點,以與實施例9相同付予-3點至+3點範圍之點數來進行官能評估。對照品是無添加風味改
善劑(添加乙醇)者。
其評估結果在表14中表示。表中之數字是5名專門評審員之平均點數。
在實施例24中,除了加入含有實施例7之風味改善劑取代實施例3之風味改善劑之外,其餘與實施例24相同操作,可得含有風味改善劑之沾麵醬汁,此沾麵醬汁之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含有量為0.00002重量%。此試料與實施例24同樣地進行官能評估。
此之評估結果在表14中表示。表中之數字是5名專門評審員之平均點。
在實施例24與實施例25中使用之風味改善劑是賦予沾麵醬汁醇味及深度,亦提高嗜好性。
將實施例1所得之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛100mg溶解到1ml之乙醇中,再加水100ml,製作0.1重量%之乙醇1重量%溶液,用水反覆稀釋10倍作為評估用試料。考慮到乙醇之味道,製作乙醇1重量%溶液並反覆稀
釋10倍,作為對應評估用試料之空白組,由9名專門評審員進行評估。官能試驗係從濃度淡的開始進行,空白組→試料之順序將200mg含在口中評估後判定味道之差異。
試驗之結果,苦味界限值為1ppm,界限值算成莫耳濃度時約10-3mM,與代表性的苦味物質鹽酸金雞納(Quinine hydrochloride)為相同程度的數值。
同樣之試驗在下述式2、式3之化合物中進行時,此等即使為最高濃度之0.1重量%也不會有苦味之感覺。
又,使用實施例2中以式2、式3之化合物取代5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛所調製之劑,以及以式2、式3之化合物100倍量作成之劑,進行與實施例9相同之試驗時,任何一種都無法認定有風味改善效果,亦出現嗆味等之不愉快雜味。
同時,如上所述而可理解,本發明之縮醛化合物之苦味界限值雖為1ppm(0.0001重量%),但風味改善效果也能發揮到沒有感覺苦味之程度。
藉由將本發明之風味改善劑摻配到飲食品、醫藥品或口腔用製品等之中,能增強醇味等之味道,改善後賦予深
入之味道,再者,例如改善量感或餘味之消除等,可以充分增強或緩和口腔內所感受到之風味。依本發明的話,可以提供因應近年來對於味覺有高度要求美味程度之飲食品、醫藥品或口腔用製品。
Claims (16)
- 一種5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛(5-hydroxymethyl-2-furaldehyde bis(5-formylfurfuryl)acetal)。
- 一種組成物,其係含有0.1重量%以上之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛者。
- 一種組成物,其係含有0.7重量%以上之5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛者。
- 一種風味改善劑,其係含有以5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛作為有效成分者。
- 如申請專利範圍第4項之風味改善劑,其係另含有香料者。
- 如申請專利範圍第4或5項之風味改善劑,其中,5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為0.1重量%以上。
- 如申請專利範圍第4或5項之風味改善劑,其中,5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為0.7重量%以上。
- 一種香料組成物,其係含有5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛與香料者。
- 如申請專利範圍第8項之香料組成物,其中,5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為0.000001至50重量%。
- 如申請專利範圍第8項之香料組成物,其中,5-羥甲基 -2-糠醛二(5-甲醯基糠基)縮醛之含量為0.00001至10重量%。
- 一種飲食品,其係含有如申請專利範圍第4至7項中任一項之風味改善劑或如申請專利範圍第8至10項中任一項之香料組成物者。
- 如申請專利範圍第11項之飲食品,其中,5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為1ppb至1000ppm。
- 一種醫藥品,其係含有如申請專利範圍第4至7項中任一項之風味改善劑或第8至10項中任一項之香料組成物者。
- 如申請專利範圍第13項之醫藥品,其中,5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為1ppb至1000ppm。
- 一種口腔用製品,其係含有如申請專利範圍第4至7項中任一項之風味改善劑或第8至10項中任一項之香料組成物者。
- 如申請專利範圍第15項之口腔用製品,其中,5-羥甲基-2-糠醛二(5-甲醯基糠基)縮醛之含量為1ppb至1000ppm。
