Description
第二に、前記不快味を持つ糖及び/又は糖アルコールが、グルコース、フラクトース、エリスリトール、キシリトール、ソルビトール、マルチトール、イソマルツロース、還元イソマルツロースから選ばれる1種または2種以上の混合組成物であることを特徴とする、上記第一に記載の方法である。
第三に、前記酵母エキスが塩分を5%未満含有することを特徴とする、上記第一または第二に記載の方法である。
第四に、上記第一から第三のいずれか一つに記載の方法で糖及び/又は糖アルコールの不快味がマスキングされた食品である。
キシリット微粉に、酵母エキスDを1.4%添加し、マスキングの評価を行った。結果を表2に示す。
Claims (2)
- 糖及び/又は糖アルコールのエグ味、渋味、収斂味から選ばれる1種以上の不快味を、ペプチドを10%以上、塩分を5%未満含有する酵母エキスを用いて、マスキングする方法。
- 前記不快味を持つ糖及び/又は糖アルコールが、グルコース、フラクトース、エリスリトール、キシリトール、ソルビトール、マルチトール、イソマルツロース、還元イソマルツロースから選ばれる1種または2種以上の混合組成物であることを特徴とする、請求項1に記載の方法。
