Claims (36)
1. Ароматизирующая композиция, содержащая пептид, где пептид содержит:
(i) пироглутаминовую кислоту (pGlu); и
(ii) вторую аминокислоту, выбранную из группы, состоящей из глицина (Gly), аланина (Ala), валина (Val), лейцина (Leu), изолейцина (Ile), пролина (Pro), фенилаланина (Phe), метионина (Met), тирозина (Tyr), триптофана (Trp) и цистеина (Cys);
где композиция дополнительно содержит соль, выбранную из группы, состоящей из хлорида натрия, хлорида калия и их комбинаций.
2. Ароматизирующая композиция, содержащая пептид, где пептид содержит:
(i) пироглутаминовую кислоту (pGlu);
(ii) вторую аминокислоту, выбранную из группы, состоящей из валина (Val), лейцина (Leu), изолейцина (Ile) и цистеина (Cys); и
(iii) третью аминокислоту, выбранную из группы, состоящей из глицина (Gly), аланина (Ala), валина (Val), лейцина (Leu), изолейцина (Ile), пролина (Pro), фенилаланина (Phe), метионина (Met), тирозина (Tyr), триптофана (Trp), цистеина (Cys), глутамина (Gln), серина (Ser) и глутамата (Glu).
3. Ароматизирующая композиция, содержащая пептид, где пептид содержит:
(i) γ-глутаминовую кислоту (γGlu); и
(ii) вторую аминокислоту, выбранную из группы, состоящей из глицина (Gly), аланина (Ala), изолейцина (Ile), пролина (Pro), тирозина (Tyr), триптофана (Trp) и цистеина (Cys).
4. Ароматизирующая композиция, содержащая пептид, где пептид содержит:
(i) γ-глутаминовую кислоту (γGlu);
(ii) вторую аминокислоту, выбранную из группы, состоящей из валина (Val), лейцина (Leu), изолейцина (Ile) и пролина (Pro); и
(iii) третью аминокислоту, выбранную из группы, состоящей

5. Ароматизирующая композиция, содержащая пептид, где пептид содержит:
(i) γ-глутаминовую кислоту (γGlu);
(ii) вторую аминокислоту, выбранную из группы, состоящей из валина (Val), лейцина (Leu), фенилаланина (Phe) и метионина (Met);
где композиция дополнительно содержит соль, выбранную из группы, состоящей из хлорида натрия, хлорида калия и их комбинаций.
6. Ароматизирующая композиция, содержащая пептид, выбранный из группы, состоящей из pGlu-Val, pGlu-Cys, pGlu-Val-Leu, pGlu-Val-Val, pGlu-Val-Cys, pGlu-Cys-Gly, pGlu-Cys-Cys, pGlu-Cys-Val и их комбинаций.
7. Ароматизирующая композиция по одному из пп. 1-6, где ароматизирующую композицию получают из источника пищевого продукта, где источник пищевого продукта подвергают гидролизу, фракционированию, экстракции, обогащению или их комбинациям.
8. Ароматизирующая композиция по одному из пп. 1-6, где пептид ароматизирующей композиции является синтетическим пептидом.
9. Ароматизирующая композиция по одному из пп. 1-6, где ароматизирующая композиция входит в рецептуру пищевого продукта.
10. Ароматизирующая композиция по п. 9, где пептид присутствует в пищевом продукте в концентрации примерно от 0,0000001 до примерно 1,0% масс./масс. пищевого продукта.
11. Ароматизирующая композиция по п. 9, где пептид присутствует в концентрации примерно от 0,1 до примерно 1000 ppb пищевого продукта.
12. Ароматизирующая композиция по п. 9, где ароматизирующую композицию получают из источника пищевого продукта, где источник пищевого продукта подвергают гидролизу, фракционированию, экстракции, обогащению или их комбинациям.
13. Ароматизирующая композиция по п. 9, где пептид ароматизирующей композиции является синтетическим пептидом.
14. Способ усиления интенсивности солености в пищевом продукте, включающий добавление в пищевой продукт ароматизирующей композиции по одному из пп. 1-8.
15. Способ по п. 14, где пептид ароматизирующей композиции присутствует в концентрации примерно от 0,0000001 до примерно 1,0% в смеси.
16. Способ по п. 14, где пептид ароматизирующей композиции присутствует в концентрации примерно от 0,1 до примерно 1000 ppb в смеси.
17. Способ по п. 14, где усиление в интенсивности солености включает усиление в соленом послевкусии.
18. Способ по п. 14, дополнительно включающий снижение количества хлорида натрия в пищевом продукте, по меньшей мере, на 10%.
19. Способ усиления интенсивности умами в пищевом продукте, включающий добавление в пищевой продукт ароматизирующей композиции по одному из пп. 1-8, где пептид ароматизирующей композиции присутствует в концентрации примерно от 0,1 до примерно 1000 ppt в смеси.
20. Способ по п. 17, где пептид ароматизирующей композиции присутствует в концентрации примерно от 0,1 до примерно 100 ppb в смеси.
21. Способ по одному из пп. 12-18, где ароматизирующая композиция и/или пищевой продукт содержат соль, выбранную из группы, состоящей из хлорида натрия, хлорида калия и их комбинаций, и где способ дополнительно включает снижение концентрации соли в пищевом продукте.
