Claims (17)

1. Кристаллы соли неприродного стереоизомера монатина.
2. Кристаллы по п.1, где кристаллы представляют собой кристаллы любой соли (2S,4R)-изомера, (2R,4R)-изомера и (2R,4S)-изомера монатина.
3. Кристаллы по п.2, где кристаллы представляют собой кристаллы соли (2R,4R)-изомера монатина.
4. Кристаллы по п.1, где соль выбрана из аммониевой соли, натриевой соли, калиевой соли, литиевой соли, кальциевой соли и магниевой соли.
5. Кристаллы по п.1 или 3, где кристаллы содержат соль стереоизомера, химическая чистота которой составляет по меньшей мере 95%.
6. Кристаллы по п.5, где кристаллы имеют оптическую чистоту, по меньшей мере, 94%.
7. Кристаллы по п.1 или 3, где кристаллы имеют оптическую чистоту, по меньшей мере, 94%.
8. Кристаллы по п.1, где кристаллы представляют собой кристаллы смеси солей, по меньшей мере, двух изомеров, выбранных из (2S,4R)-изомера, (2R,4R)-изомера и (2R,4S)-изомера монатина.
9. Кристаллы по п.1, где кристаллы имеют по меньшей мере 1000-кратную интенсивность сладкого вкуса (величину сладости) по сравнению с сахарозой.
10. Кристаллы по п.1 или 3, где кристаллы находятся в виде смеси с солью (2S,4S)-изомера монатина.
11. Кристаллы по п.10, где кристаллы содержат не более 70% соли (2S,4S)-изомера монатина по отношению к общему количеству солей монатина.
12. Кристаллы по п.10, где кристаллы представляют собой смесь кристаллов соли (2S,4S)-изомера монатина и соли (2R,4R)-изомера монатина.
13. Кристаллы по п.12, где отношение соли (2S,4S)-изомера монатина к соли (2R,4R)-изомера монатина составляет 1:1.
14. Подсластитель, отличающийся тем, что он содержит кристаллы, указанные в любом из пп.1-13, где подсластитель может необязательно содержать носитель и/или наполнитель (средство, составляющее основную массу), используемые для подсластителей.
15. Подсластитель по п.13, который содержит, по меньшей мере, одно составляющее (соединение), выбранное из сахаридов и других искусственных и природных подсластителей.
16. Продукт, такой как напиток или пищевой продукт, которому придают сладкий вкус, отличающийся тем, что он содержит кристаллы, указанные в любом из пп.1-13, или тем, что его получают с использованием данных кристаллов.
17. Продукт, такой как напиток или пищевой продукт, по п.16, который содержит, по меньшей мере, одно составляющее (соединение), выбранное из сахаридов и других искусственных и природных подсластителей.
