Abstract
Procedeul de preparare a fulgilor de proteina vegetala texturata, conform prezentei inventii , consta în sortarea particulelor obtinute în prealabil dintr-o masa topita, fragmentata, hidratata si uscata, sortare ce se face la o dimensiune cuprinsa între 0,10 si 2,54 cm, urmata de o hidratare cu apa la o temperatura cuprinsa între 18 si 121 degree C sub o presiune de 1 kgf/cm la puterea 2 pîna la un continut de umiditate de 12.....24% în greutate, dupa care particulele sunt transformate în fulgi prin trecerea acestora printre cilindrii de fulguire obtinîndu-se fulgi cu o grosime de 0,15 la 0,0025 cm li o densitate de volum de 0,144 pîna la 0,592 g/cm la puterea 3, fulgi care sunt uscati în continuare pîna la o umiditate de 2...10% în greutate prin încalzire la o temperatura de 32 la 260 degree C timp de 20 s pîna la 24 h, produsul uscat avînd o densitate cuprinsa între 0,112 si 0,40 g/cm la puterea 3. Procedeul, conform inventiei, include texturarea substantei proteice vegetale continînd umiditate la o presiune de cel putin 126 kgf/cm la puterea 2 într-un timp si la o temperatura suficienta pentru a converti umiditatea în vapori, ceea ce permite ca substanta proteica vegetala sa fie prajita fara a se arde si este compactizata într-o masa cu caracteristici texturate. Masa obtinuta este fragmentata în particule, iar substanta proteica vegetala texturata este sortata dupa marime, astfel încît portiunea retinuta din materia proteica vegetala texturata .....
